Tropical Traditions Organic Raw Honey         My family loves honey.  We use it all the time on cereal or oatmeal, and in baking.  It has a very different taste than sugar, and we much prefer it.  So  I was glad to try out the Canadian Organic Raw Honey from Tropical Traditions.  This is different from the amber colored liquid you find in stores.  It comes from the frontier areas of Canada, and is only harvested during a 6-week period in the summer.  In order for honey to be certified organic the beehives must be placed in isolated areas miles from the population and industry.  So organic honey is actually hard to find, since most areas are not suitable for harvesting it.

Tropical Traditions is very selective about their products, and this honey is no exception.  It has not been heated for processing, and is never heated above the temperatures it would see in the hive.  The result is honey with a smooth and creamy texture, more like soft margarine than a liquid.  It is very sweet and flavorful, and is especially good for using on cereal or in coffee or tea.  It is a little different to use because it is semi-soft instead of liquid, but it works fine.  If you add a teaspoon to a hot liquid like coffee it melts nicely in the cup.   Before putting on cold cereal we simply microwave it for a few seconds to melt it.  I thought it was easier to measure the honey in the semi-solid form, since it creates less of a sticky mess on the spoon.
