I love chili, especially this time of year. Chili is the perfect wintertime food, because it is warm and filling and spicy. Plus there are so many recipes and variations I rarely make it the same way twice. Sometimes I make Cincinnati Chili, sometimes I make Texas Chili, sometimes I make White Chicken Chili, and sometimes I make it vegetarian. The possibilities are endless. To help celebrate Chili season and its variations the Chili Appreciation Society International and Bruce Foods sent me some Mexene Chili Powder and Louisiana Hot Sauce to review.

I always enjoy reviewing their products because I know I can count on them to provide me with quality food. This month I am reviewing their Coconut Flour. This flour is made from the coconut meat after the oil has been extracted. It is organic, unsweetened and gluten free. It is also high in both dietary fiber and protein. It seems like more and more people are trying to eat gluten free, and this flour is excellent for that. You can use it to make quick breads or muffins in place of wheat flour, and you can even use it as a thickener for sauces.
Celebrating the Big Game with Bob Evans
My family and I had a great time on Sunday celebrating the Giant’s big football win! Of course any football party needs good food, and ours was made even better thanks to a great “Big Game” celebration kit from Bob Evans. The kit included a portable mini slow cooker, football chili bowls and Bob Evans Original Roll and Zesty Hot sausages and some recipes. I love the idea of making chili with sausage instead of ground beef! Here is the Bob Evans recipe, and it is extremely simple and quick to make.

Since I have been trying to lose weight I have been having cereal for breakfast almost every morning, and it is starting to get boring! So today I made this Apple Cherry Bake for breakfast, and it was delicious. Because there is nothing in it but fruit it is pretty low calorie, about 230 calories per serving according to the online recipe tool I used. The portion was huge, and it was very filling. It is kind of like a fruit crisp, only without the topping. It does take a while to bake, but I think it would work well in a slow cooker, so I am going to try that next time and start it before bedtime. [Read more...]
My Son’s Favorite Clothes–Jeans #LuvCookies #cbias
My son Robert is twelve, and even though he is not a teen yet he has adopted the standard teenage boy dress code of jeans, hoodies and t-shirts. Those are his favorite things to wear – except for his pajama pants, but I won’t let him wear those out of the house. So whenever he is going anywhere he wears his jeans, with a t-shirt and hoodie. Vegetarian Chili with Zucchini and Abodo Sauce
We have been eating more vegetarian food lately, partly because it can be healthier, and partly because my 18 year old is a vegetarian and she is still home on college break. I made this recipe for Vegetarian Chili earlier in the week, and it came out very tasty. I added in a little sauce from a can of chipotle chile in adobo sauce, and it made a huge difference in the taste. I didn’t add any of the chilies from the can, but just poured in about a teaspoon of the sauce. It added a rich smoky flavor to the dish. It is amazing what a big difference a small addition can make.
Menu Plan Monday–1/9

We have been trying to eat more fish lately because it is supposed to be good for you. Over the summer my husband and son when deep sea fishing and caught a whole bunch of Bluefish, which we froze. Unfortunately it is not a favorite of mine, since Bluefish is oily and strong tasting. But I am trying it again this week with a citrus marinade, and hopefully I will like it better this time. I think there is only one package left in the freezer now, so at least we are almost done with it.
Spinach Pear Salad Recipe
With trying to eat healthier I’ve been eating lots and lots of salad. So I’ve been looking for ways to make my salads more interesting and go beyond the standard lettuce, cucumbers and tomatoes. I made this Spinach Pear Salad and it was delicious. I haven’t ever used fruit with salad greens much before, but I can see it is an excellent combination.
