Burgers are a staple food in my house and many others in the summer time! It is quick and easy to grill some up and have dinner ready, but without variety burgers can get boring. Here is a fun variation I made this week, using a traditional Argentinian Chimichurri sauce to spice up the burgers.
Chimichurri sauce is a garlicky sauce made with fresh parsley and oregano that is very easy to make at home. I have lots of parsley growing in pots on my deck, and Chimichurri sauce is one of my favorite ways to use it. The sauce is traditionally used on grilled steak, but it works well on burgers too!
The sauce added some great flavor to the meat, and made a nice change from a standard cheeseburger with ketchup and mustard.
Chimichurri Burger
Ingredients
- 1/2 c. olive oil
- 1 1/2 c. Italian parsley
- 3 Tablespoon fresh oregano
- 5 cloves garlic
- 4 teaspoon wine vinegar
- 1 lb ground beef
- salt and pepper to taste
- 1 onion
- 1 tomato
- lettuce
- 4 hamburger buns
Instructions
- Heat the grill.
- To make the Chimichurri sauce combine the olive oil, parsley, oregano, garlic and vinegar in a food processor. Process until mixed.
- Form the beef into 4 patties and season with salt and pepper. Slice the onions.
- Place the onions and beef patties on the grill, and cook for 10-14 minutes, flipping once until done.
- Serve the burgers with tomato slices, lettuce and top with Chimichurri sauce.

I love adding garlic sauce to my burgers and sneaking veggies into the patties as well; like mushrooms, beans or lentils.

Once upon a time, I didn’t eat much meat. Now I could eat burgers everyday (well maybe I exaggerate a little). I love a good burger and I especially love burgers with a twist like this one. What a clever idea to use chimichurri! Thank you for sharing.
