NCAA® March Madness is in full swing, and my family and I are loving the games. Last weekend was crazy, with some great upsets and lots of close finishes, and I am sure this weekend’s basketball games will be just as fantastic! Coke Zero Shredded Taco Beef - perfect for a taco bar at your basketball party

Tacos are the perfect game day food, because they are ready when you are!  After all, you never know when a game will go into overtime, so it is hard to serve something that needs precise timing.  This weekend I had my extended family over for some fun and basketball, and the taco bar was a big hit.

To make the taco beef I cooked a roast in the slow cooker with some spices, vegetables and my secret ingredient – Coke Zero.  The soda gives the meat a slightly sweet flavor, which blended perfectly with the spicy peppers.  I simply cut up a jalepeno pepper, a green pepper, a chipotle chile and some garlic and put it all in the crock pot with my roast.  I added a few spices, poured a can of Coke Zero over the whole thing and set it on low.  About 5 hours later I shredded the beef with forks, and returned it to the slow cooker until it was time for dinner.

Ingredients
 

  • 3 lb beef roast
  • 1 green pepper
  • 1 jalepeno pepper
  • 1 chipolte chile
  • 4 cloves garlic
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • pepper to taste
  • 12 oz can Coke Zero

Instructions

  • Put the roast in a slow cooker.
  • Chop the green pepper, jalepeno pepper, chipolte chile and garlic finely and add to the slow cooker.
  • Sprinkle the cumin, onion powder, salt and pepper over the meat.
  • Pour a can of Coke Zero over the entire dish.
  • Cook for 5 hours on low. Then shred the beef with 2 forks and return it to the slow cooker (still on low) to cook for another hours or longer.

I love party dishes like that this that are low preparation, because then I can enjoy the company and not spend the entire day in the kitchen! The Coke Zero Shredded Taco Beef went perfectly with all the traditional taco toppings, like cheese, green onions, jalepenos, salsa sour cream and guacamole.  I put out a wide variety of toppings, and everyone could add their own favorite taco fixing when they were ready to take a break from the games and eat.
