Nothing can ruin a special moment in your life more quickly than a headache! Sometimes it seems like the more you plan and anticipate a big event the more likely it is that an ill timed headache will strike. This past summer my husband and I planned a special anniversary cruise. We went on a cruise once before, on our honeymoon, and had talked for years about how much we would like to cruise again. Finally our kids were old enough that we could leave them behind without (too much) worrying, and enjoy a relaxing vacation by ourselves! I spent hours planning out excursions, planning special dinners and getting advice from experienced cruisers about all the best shows and events, to make this a vacation to remember.
My husband and I really wanted to relax and spend time together on this cruise, and we did. We relaxed by the pool and soaked in the hot tub and indulged in treats like chocolate covered strawberries.
We ventured off the ship in San Juan and explored the historic forts in gorgeous sunny weather.
The last night at sea we planned a special dinner, followed by an evening enjoying the music at the jazz lounge. But at the pool in the afternoon I started to feel the familiar feelings of a headache starting. I could tell right away it was going to be a nasty headache – one of those ones that makes you just want to crawl under the covers and close your eyes. I wasn’t going to let a headache ruin our last night, so I reached for the Excedrin® Extra Strength.
Who knows what brought the headache on that day. After all a cruise is just full of situations that can trigger a headache – too much sun, too much rich food, too much noise and too many people!

So instead of staying in the cabin and wasting the last evening of our vacation, my husband and I enjoyed a romantic dinner and a night of music that we will remember forever!
One of the things we enjoyed at our special dinner that night was this delicious Seafood Pasta. Once we got home I recreated the dish to serve at home and bring back memories of our cruise!
My pasta dish isn’t exactly the same, because the chefs on board made homemade pasta, and there is just no way that is happening at my house. But it tastes delicious, even with store bought pasta. The meal includes a combination of three types of seafood, calamari, scallops and shrimp.
I made the tomato sauce by combining cherry tomatoes with canned pureed tomatoes. The combination of the two makes for a sauce that is quick to make but still tastes fresh.
Easy Seafood Pasta
Ingredients
- 12 oz pasta
- 3 Tablespoon olive oil
- 4 garlic cloves minced
- 1 pint cherry tomatoes halved
- ½ cup pureed tomatoes
- ¼ teaspoon Crushed red pepper
- 1 teaspoon salt
- ½ cup chicken broth
- ½ lb calamari
- ½ lb scallops
- 1 lb shrimp
- 2 Tablespoon fresh parsley
Instructions
- Heat the olive oil in a skillet over medium heat.
- Heat a large pan of salted water over high heat and cook the pasta, following package directions.
- Sautee the garlic for 1 minute, then add the cherry tomatoes.
- Cook, stirring, for 5 minutes until the tomatoes start to break down.
- Add the pureed tomatoes, red pepper and salt. Stir to mix.
- Add in the chicken broth and ½ c of pasta water and cook for 2 minutes.
- Stir in the calamari and cook for 1 minutes.
- Add the scallops and let cook for 2 minutes, stirring.
- Add the shrimp and cook until no longer pink.
- Stir the drained pasta into the pot and serve immediately, sprinkled with parsley.
