Easy Steak Fajitas with Redd’s Apple Ale

I love to cook outside on the grill whenever I can. It is less cleanup for me, and the food just tastes better cooked over an open flame – especially steak! Last week I made these Easy Steak Fajitas for a quick and delicious summer meal.

The secret ingredient in these fajitas is the marinade. I marinaded them in Redd’s Apple Ale, which gave the meat a delicious subtle flavor. The enzymes in the alcohol help break down the tough fibers in the meat, making it more tender and giving it more flavor. I picked Apple Ale for the marinade because it is one of my favorites, and the sweetness of the apple flavor makes it extra good.

The marinade I used was very simple. I combined the Ale with garlic scapes, cumin, salt and pepper and marinaded the Certified Angus beef for about 5 hours.  Garlic scapes are the stalks of garlic plants, and if you don’t have any you can simply substitute a few cloves of garlic.

When it was time for dinner I cut up an onion and a yellow pepper and wrapped them in foil with a little olive oil to cook on the grill with the steak.  I put the steak and the foil packet on the grill and cooked them until the steak was medium.

While the steak cooked I cut up some avocado and lime to serve with the fajitas, along with tortillas and salsa. Dinner was ready in about 15 minutes, and it tasted wonderful, especially paired with the Redd’s Green Apple Ale.

Ingredients
 

For the Beef

  • 1 1/2 lb. Certified Angus Beef Steak - flank skirt or sirloin
  • 1/2 cup Redd's Apple Ale
  • 3 garlic scapes or 3 garlic cloves
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

For the Fajitas

  • 1 onion
  • 1 yellow pepper
  • 1 Tablespoon olive oil
  • 4 flour tortillas
  • 1/2 avocado
  • 1 lime
  • 1/2 cup salsa

Instructions

  • To marinade the beef mix the Apple Ale with the cumin, salt, pepper and garlic scapes. Add to a ziploc bag with the beef.
  • Marinade in the refrigerator for 1-6 hours.
  • Preheat the grill to medium.
  • Slice the onion and yellow pepper and wrap in foil with a tablespoon of olive oil.
  • Place the beef and onion/pepper packet on the grill and cook until the beef reaches the desired temperature, flipping once.
  • Serve the beef, peppers and onions with tortillas, lime, avocado and salsa.

I bought all the ingredients except the garlic scapes at my local Price Chopper.  They have a fantastic selection of items perfect for all your BBQ needs.

  1. I’ve been wanting to try Redd’s Apple Ale but wasn’t sure if I would like it or not. Knowing that I can use it to marinate meat is a great excuse to try it even if I don’t end up loving the flavor to drink.
