Red Velvet Cookies
Serves: 24
  • 1 box Red Velvet Cake Mix
  • ½ c. cooking oil
  • 1 egg
  • 1 t. vanilla
Chocolate topping
  • ¼ c. white chocolate chips
  • 5 crushed peppermint candies
  1. Preheat the oven to 350 F.
  2. Mix the cake mix, oil, egg and vanilla in a bowl until smooth.
  3. Roll the dough into balls 1 inch in diameter and put on a cookie sheet.
  4. Bake for about 12 minutes, until browned on the bottom.
  5. Let cookies cool on a wire rack.
  6. Heat the chocolate chips in a ziploc bag in the microwave, 20 seconds at a time until melted.
  7. Cut off a corner of the bag and drizzle the white chocolate on the cookies.
  8. Sprinkle crushed peppermint candies on the chocolate.
