Southwestern Pork Stew in the Slow Cooker
 
Ingredients
  • 1 onion, chopped
  • 3 minced garlic cloves
  • 1 pork tenderloin, cubed
  • ¼ cup cornmeal
  • 1 t. ground cumin
  • 1 T. chili powder
  • ½ t. oregano
  • 1 t. salt
  • 1 can pinto beans or black beans, drained
  • 1 cup water
  • 1 can diced tomatoes, undrained
  • 2 cups frozen corn (thawed)
Instructions
Slow Cooker Directions
  1. Combine everything but corn in slow cooker and mix well. Cook 6-8 hours on low.
  2. Add corn and cook a few minutes more.
  3. Serve over cornbread or corn muffins.
Instant Pot Directions
  1. Combine everything but corn in Instant Pot and mix well. Cover, bring to pressure on the "Stew/Meat" setting and cook for 25 minutes.
  2. Let the pressure release naturally for 10 minutes, then release the rest of the pressure and stir in the corn. Cover and let it sit for 5 minutes to heat the corn.
  3. Serve over cornbread or corn muffins.
