Holiday season is all about parties!  We always host a big family party on Christmas Day and have lots of appetizers and finger food for everyone to eat until Christmas dinner. This year one of the appetizers I am planning to make is these Jalapeno Crab Bites, a delicious party food.

I like to have a large variety of food for our Christmas Day, because it is one of those days many people don’t each much for breakfast!  The excitement of presents means breakfast tends to be rushed, if it is eaten at all.  Everyone in my family loves seafood, so I try to include some every year.  A few years ago I made a squid appetizer, and that was not a big hit, so I figured I’d stick to something more traditional this year and make crab cake bites.  This recipe uses Tabasco Green Jalapeno sauce to enhance the flavor of the crab meat.

 

I wanted to try the recipe out first before serving if for Christmas, because after the squid incident I realized winging it on a holiday is risky! I like lump crab cakes with only a few ingredients, not lots of filler.  I want to be able to really taste the crab!  So I just added some bread crumbs and a shallot to the lump crab meat, and then flavored it with the Green Jalapeno Sauce and some mustard powder and used eggs to hold it all together. The Green Sauce is milder than original Tabasco Red Sauce, so you can add quite a bit to liven up the flavor of the crab cakes.

The key to making good lump crab cakes it to mix the ingredients gently, so you don’t break up the crab meat.  I mixed the ingredients by hand, because that is the best way to make sure it gets well mixed.

I used mini muffin tins to make the Crab Bites perfectly bite sized.  They cook better if you refrigerate them for at least half an hour after making them.  This helps them hold together and it is convenient for a party, because you can make them ahead of time and just refrigerate them until right before the party.  Holiday party recipes that can be made in advance are great, because then there is less rushing around when guests are expected.

The Crab Bites were quite tasty, and the Jalapeno Sauce gave them a nice kick.  They are perfect for my holiday entertaining this year.

Jalepeno Crab Bites

Ingredients
 

  • 1 lb lump crab meat
  • 1 shallot
  • 2 eggs
  • 1/2 cup panko bread crumbs
  • 1 Tablespoon Tabasco Green Jalepeno sauce
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt

Instructions

  • Dice the shallot finely and gently mix the shallot, the crab meat and the eggs together.
  • Combine the bread crumbs, Tabasco Sauce, mustard and salt and sprinkle over the crab meat mixture.
  • Gently mix all the ingredients.
  • Spray two mini-muffin tins with cooking spray. Add 1 T of crab mixture to the tins.
  • Refrigerate the muffin tins for at least 1/2 an hour, or until time to cook.
  • Preheat the oven to 350.
  • Bake the crab bites for 20-25 minutes until lightly brown on top.
