Peepsicles – Chocolate Covered Marshmallow Pops

Chocolate covered marshmallow pops are a cute Easter recipe made from chocolate dipped frozen Peeps. Dip the entire bunny or just the ears! This Peeps recipe is quick and easy to make and sure to be a hit with kids of all ages.

These Chocolate Covered Marshmallow Pops are fun and easy to make. Using bunny Peeps makes them an adorable Easter snack.

Making Easter Recipes with Peeps

Peeps are a classic Easter treat that is everywhere in the stores this time of year. I decided to make these Marshmallow Pops with cute bunny shaped Peeps. Easter Peeps come in two basic shapes, bunnies and chicks. I thought about trying to use the chicks, but it seemed to me that they just wouldn’t work as well on a stick. Since the bunnies are long and thin they are just better suited for making marshmallow pops.

This is a quick recipe to make, but it is a good idea to get everything ready before you start. Once you melt the chocolate you need to work quickly to coat the Peeps. So before you start set up your bowls of sprinkles and get a cookie sheet ready with waxed paper to hold the finished treats.

Ingredients for making chocolate dipped peeps

The first step in making these Peepsicles is to push the bunny Peeps onto a paper straw. You could also use a wooden skewer or lollipop stick, but brightly colored paper straws will be the prettiest!

I pushed the straw way up, all the way to almost the top of the bunny’s head. These Peeps pops are heavy once they are coated in chocolate and you don’t want the Peeps falling off the straw.

Then I melted chocolate chips. I usually melt chocolate chips in the microwave, starting out with 30 seconds and then stirring. Then I melt the chocolate chips again, 20 seconds at a time until the chocolate is completely melted. You can also melt the chocolate in a double boiler.

Then I dipped the Peeps into the chocolate and coated them all over with gooey chocolate. I used a spoon to spread the chocolate and twirled the Peeps on the straw to let excess chocolate drip off. It doesn’t really matter if the chocolate doesn’t come out even and smooth since you are going to cover it up with sprinkles anyway. You can make the chocolate layer as thick or as thin as you like.

While the chocolate was still melted I sprinkled the chocolate covered Peeps with colored sprinkles, nuts or coconut. I held the chocolate Peeps over a bowl and used my fingers to add the sprinkles so that I got a lot of toppings on the bunnies. It is fun to get a good variety of toppings and colors, so that your final marshmallow pops are both colorful and tasty.

Finally these treats go into the freezer for about half an hour to freeze them. You can leave them in longer if you are making these ahead of time.

You Can Freeze Marshmallows?

Freezing the chocolate covered marshmallow pops doesn’t just solidify the chocolate, it also actually makes them taste better. The frozen Peeps melt in your mouth and give a nice sweet blast of flavor. Marshmallow Peeps are made mostly of sugar, which is a preservative, so freezing them doesn’t harm the flavor at all. Marshmallows can be frozen for about three months with no real loss of flavor. Of course I doubt these Peep Pops will last in your freezer for that long!

Chocolate Dipped Peeps

Now one possible problem with these Peep Pops is that they are very, very chocolaty. Can you have too much chocolate? Well maybe. I find that the amount of chocolate on a totally covered bunny is almost too much.  So an alternative is to just dip the bunny ears in chocolate. Then decorate the ears with brightly colored sprinkles and freeze the Peeps. This results in a tasty treat that is heavier on the marshmallow than the chocolate, but still super cute.

This alternative lets you taste more of the marshmallow but still has a lot of chocolate flavor. When it came to these Peep Pops my son like the ones covered in sprinkles best, while my daughter was a huge fan of the coconut covered Peeps. I liked the ones with just the ears covered, although all of the varieties were tasty. It is nice to have a colorful assortment of these spring treats.

  • Put a straw inside the Bunny Peep. Push it all the way to in so the Peep doesn't fall off.
  • Melt the chocolate chips in the microwave for one minute. Stir and then continue microwave in 20 second intervals until the chocolate is smooth.
  • Dip the Peep in the chocolate until it is covered. Use a spoon the get excess chocolate off the Peep and let it drip back into the bowl.
  • Sprinkle the Peep with the desire topping and place on waxed paper.
  • Freeze for half an hour to an hour and enjoy.

Notes

For a less chocolaty alternative just dip the bunny ears in chocolate and coat with sprinkles.

  1. I love my PEEPS. As a matter of fact, I’ve got some in my pantry right now.

    I’ve never tried dipping them in chocolate, I tend to be a traditionalist. However, this really does look like a fun thing to do with the kids…maybe we will give this a try this weekend.

  2. These are just the cutest idea. I used to work at a candy store when I was in high school and college and the owner would do half-dipped peeps as a seasonal special and people just went nuts over them! This brought back such happy Easter memories for me!
