I am sure I am not the only person looking for healthy and delicious recipes this New Year!  For me the hardest meal to eat well at is lunch, because I get bored with the same old lunches day after day. So this week I put a different twist on basic tuna salad to make this tasty Southwestern Tuna Wrap.

Southwestern Tuna Wrap - an easy and healthy lunch idea featuring tuna fish with black beans, tomatoes and cilantro, with a Greek yogurt dressing, wrapped in corn tortillas.

To make it I combined Bumble Bee® Albacore White Tuna with vegetables and beans for an easy and healthy lunch.

I have tuna for lunch a few times a week, because it is so easy.  You can just  open a can or a pouch, and it has  lean protein, healthy fat, and important vitamins and minerals without too many calories.  For this wrap I added healthy and colorful vegetables like tomatoes and peppers, along with olives for extra flavor.

To make the filling stick together I made a dressing from plain Greek yogurt mixed with lime juice and spices like chili powder and cumin to give it a southwestern touch.  Hot sauce was a great addition to this recipe, and really added a flavor punch.

Then I wrapped it up in corn tortillas and served it with guacamole.  It would be quite tasty as a stand alone salad too, or you could serve it over lettuce to add some greens to the meal.  I really love this dish, because it tastes so much better than the basic tuna wrap I usually make.  It always amazes me how making a few tweaks to a recipe can make it taste totally different!

Ingredients
 

  • 2 cans white albacore tuna
  • 1/2 yellow pepper
  • 12 olives
  • 12 cherry tomatoes
  • 4 Tablespon cilantro
  • 1/2 cup black beans
  • 3 green onions
  • 1/3 cup plain Greek yogurt
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon hot sauce
  • 1 Tablespoon lime juice
  • 8 corn tortillas

Instructions

  • Chop the yellow pepper, olives, and green onions.
  • Cut the tomatoes into quarters.
  • Drain the tuna and mix it with the yellow pepper, olives, tomatoes, cilantro, green onions and black beans and stir.
  • To make the dressing combine the greek yogurt and lime juice with all the spices and mix well.
  • Roll up in corn tortillas and serve.
