Air Fryer Breakfast Potatoes – Home Fries

These air fryer breakfast potatoes are a delicious diner style breakfast side. Cubes of potatoes are seasoned and air fried with peppers until they are crispy outside and light and tender inside. These crispy potato bites are perfect when you are having a hearty breakfast with bacon and eggs or when you are making breakfast for dinner!

Potatoes are a staple in my household, that we eat regularly, whether it is twice baked potatoes or salt potatoes. And that includes breakfast potatoes – because I will serve potatoes for any meal of the day!

Breakfast potatoes, or home fries, are delicious comfort food popular in diners everywhere. The have just a few simple ingredients are perfect for serving alongside waffles, pancakes or eggs.

I love to eat them with over easy or sunny side up eggs and let the crispy potatoes soak up the runny egg yolks. And making them in an air fryer makes it even easier to make this dinner style breakfast at home.

You don’t have to parboil the potatoes or stand over the stove frying them. Just chop some potatoes up and stick them in the air fryer while you make pancakes or eggs.

And your air fryer breakfast potatoes will be crispy outside and tender inside, but not greasy. Home fries have never been easier!

  • Potatoes – You can use almost any kind of potatoes for these home fries. I usually use russet potatoes, but red potatoes or yellow potatoes work find too. I prefer not to peel the potatoes because peeling potatoes is extra work and who wants to do extra work first thing in the morning? But if you want to peel them you can.
  • Bell peppers – The peppers cook right along with the potatoes and add color and taste to the dish. You can use any color of bell peppers.
  • Oil – The high heat and circulating air of the air fryer mean that lets you fry things with less oil. But potatoes cook best with a little bit of added oil, so don’t skip it completely.
  • Seasoning – I seasoned these with paprika, garlic powder, salt and pepper, which is pretty traditional seasoning for breakfast potatoes.

How to Make Air Fryer Home Fries

1. Cut

Start by washing and drying the potatoes and peppers. Dice them into 1 inch pieces. Making the potato pieces a mostly uniform size helps them brown evenly.

2. Season

Put the potatoes and peppers in a medium bowl and stir to mix. Drizzle them with the olive oil and stir them so they are well coated.

Then sprinkle them with the paprika, garlic powder, salt and pepper. Stir them again so that the spices coat the potatoes and peppers.

3. Cook

Put the mixture into the air fryer basket. Be sure that there are some holes visible in the basket so that air can circulate.

The potatoes don’t have to be in a single layer, but the basket should be less than half full. I was able to easily fit 4 servings of breakfast potatoes in my 5.8 quart air fryer basket. But if you have a smaller air fryer you might need to cook in batches.

Cook at 400 degrees F for 15-20 minutes. Take the basket out of the air fryer once half way through the cooking time and toss the potatoes to mix them around.

Check the potatoes after 15 minutes and see if they are browned enough. If not cook them a few minutes longer. The potatoes are done when they are brown and crispy outside.

The final cooking time will depend on the size of the potatoes, how full the basket is and how powerful your air fryer is.

How to Serve

Serve the air fryer breakfast potatoes with your favorite breakfast food. I like to top them off with a little bit of bacon and sprinkle them with parsley.

I think they are best served with runny eggs, but scrambled eggs, omelets or eggs benedict work well too. I have also served these for dinner with burgers – you don’t have to only make them for breakfast!

How to Store

These potatoes keep well in the refrigerator for 3 days. They reheat very well, either in the air fryer or on the stove.

To reheat home fries in the air fryer put them back in the air fryer at 350 degrees F for 5 minutes. The lower temperature for reheating keeps them from getting too brown.

To reheat on the stove just put them in a frying pan on medium heat for 10 minutes and stir occasionally.

Variations and Tips

  • You can change up the seasoning by adding some chili powder, using lemon pepper seasoning or using your favorite spice mix for a fun variation.
  • Making the potatoes all the same size will make them cook and brown more evenly.

FAQ

Do I need to soak the potatoes in cold water before making breakfast potatoes?

You don’t need to the soak the potatoes in cold water. Soaking them in cold water removes some of the potato starch and makes them crispier. But the air fryer does such a good job of crisping these up that soaking isn’t necessary.

On the other hand if you want the crispiest potatoes possible you can soak them. In that case put the diced potatoes in a bowl of cold water for 30 minutes to overnight and then dry them off and proceed with the recipe.

What is the difference between home fries and hash browns?

Hash browns are grated potatoes, home fries are cubed potatoes. These potatoes are air fryer home fries, not hash browns. Both taste delicious though!

Ingredients

  • 2 large baking potatoes
  • 2 small bell peppers
  • 1 1/2 Tablespoons olive oil
  • 1 teaspoon salt
  • 1 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 4 slices bacon for garnish

Instructions

  1. Clean and dice the potatoes and peppers. Cut into 1 inch cubes. You can peel the potatoes or leave the skin on, whichever you prefer.
