  1. Prep – Scrub the potatoes under cold water to wash off any dirt. Slice a thin layer off the bottom of the potato so it will sit flat while you slice it.
  2. Slice – Put two similar size wooden spoons or chopsticks on either side of the potato to stop the knife. Cut 1/4 inch slices all the way down the length of the potato. Make sure to cut part of the way through.
  3. Microwave – Brush potatoes with a bit of oil. Then microwave them for 10 minutes. This will speed up the cooking process. While they cook, slice the cheese and bacon to fit into the potato slices.

Ingredients
 

  • 3 large russet potatoes
  • 6 ounces cheddar cheese
  • 9-10 slices bacon
  • 2 tablespoons olive oil
  • 1 clove garlic or 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Scrub the potatoes and dry them off.
    3 large russet potatoes
  • Cut a thin layer off the bottom to create a flat surface and prevent rolling.
  • Place two wooden spoons or chopsticks parallel to the potato on either side to stop the knife.
  • Cut 1/8″ to 1/4″ slices using a sharp knife, stopping at the spoon handles. Make sure you keep the potato intact and don’t slice entirely through.
  • Brush the potatoes with half the oil and microwave for 10 minutes. Remove them and let them cool a bit.

  • While in the microwave, cut the cheese and bacon into squares to fit into the slices.

  • Once they are cool enough to touch, insert alternating slices of cheese and bacon into each potato slice.
  • Brush with more oil, season with garlic, salt, and pepper, and place in a single layer in the air fryer basket. Cook at 390°F for 20-30 minutes until tender inside and crispy outside. Larger potatoes will need a longer cooking time. Use a toothpick to test for doneness. If it goes in easily, they are done.
