Air fryer strawberry shortcake is a simple yet impressive way to make classic strawberry shortcake even more amazing. The air fryer grills the pound cake giving it caramelized edges and heats up the berries so they are juicy and even sweeter. Fresh summer strawberries are threaded onto skewers, drizzled with honey, and air fried along with the cake. Heating the berries makes them juicy and jammy, but they still keep their shape and stay on the skewers.

Strawberries – Nothing beats fresh, red, ripe strawberries. I like to use lots of strawberries, so the cake is covered in berries.

Pound cake – Using a store-bought pound cake is an easy way to make this a low-effort dessert. Angel food cake would also work. Or use a homemade strawberry pound cake for extra strawberry flavor.

Honey – Drizzling honey over the berries helps them caramelize in the air fryer.

Whipped cream – Strawberries and whipped cream just go together! Use homemade whipped cream or just buy a can at the store when you buy the pound cake.

Skewers for the Strawberries

You will need wooden skewers to hold the strawberries as they cook. I like to use 2 short skewers of berries for each slice of cake. You could also use longer skewers, just make sure whatever you use easily fits in the air fryer basket. There is no need to soak the wooden skewers for this recipe since it cooks so quickly.

How to Make Air Fryer Strawberry Shortcake

1. Prep

Slice the pound cake into 1/2 inch thick slices. Wash the strawberries and cut the stems off. Then set the air fryer to preheat at 350 degrees F for 2 minutes.

While it preheats thread the berries onto the skewers. Then drizzle the honey over the top of the berries. If you have a honey dipper you can just drip honey onto the fruit to coat. Or use a spoon to add the honey and spread it around a bit with your fingers.

2. Air Fry

Put the cake slices and berry skewers in the air fryer basket. Cook them for 2 minutes at 350 F. Then flip the cake slices over and cook them for another 3 minutes. You don’t need to turn the berry skewers over.

When they are done the cake will turn golden brown on top and the berries will be soft and juicy.

To serve put each slice of cake on a plate and top them with 2 (or more) skewers. Then add some whipped cream for a delicious summer dessert.

Doubling the Recipe

This recipe is for 2 servings, which easily fits into my 5.8-quart Cosori air fryer. A third slice of pound cake some more skewers of berries would fit in the basket, but if you want to make more than that you will need to cook it in batches.

You could also air fry the cake slices first and then set the grilled slices aside while you heat the berries. This cooks so quickly that the cake and strawberries don’t need to be made together.

How to Store

This is a dessert that is designed to be eaten as you make it! So make as many servings as you plan to eat. Then save extra pound cake and strawberries for another day.

Ingredients
 

  • 2 slices pound cake 1/2 inch thick slices
  • 24 strawberries
  • 1 tablespoon honey
  • 4 tablespoons whipped cream

Instructions

  • Wash the strawberries and cut the tops off.

  • Preheat the air fryer at 350 degrees F for 2 minutes.
  • While it preheats thread the berries onto 4 wooden skewers.
  • Drizzle the honey over the top of the berries. A honey dipper makes it easy to drip the honey or use a spoon.
    1 tablespoon honey
  • Put the cake slices and berry skewers in the air fryer basket. Cook at 350 F for 2 minutes.
    2 slices pound cake
  • Pull out the basket and flip the cake slices over. There is no need to turn the berries. Cook at 350 F for 3 more minutes. The cake slices will be slightly brown.
  • Put each cake slice on a plate. Top them with the skewers of berries. Add a little bit of whipped cream on top and enjoy.
    4 tablespoons whipped cream

Notes

  • Add even more skewers of berries for each cake slice if you like!
  • You could substitute store bought angel food cake for the pound cake.
