Salt potatoes are a summer tradition in central New York. If you are not from the area you have probably never heard of them, but around here they are an essential part of any summer cookout. Memorial Day, 4th of July, graduation, you name the summer occasion and salt potatoes will be served.

When I first moved to the Syracuse area I thought it was strange that my in-laws were making boiled potatoes on a grill at a summer cookout, but now I know that is just how it is done. Cookouts need salt potatoes and every church and fire department chicken barbecue will be serving these tiny, salty potatoes as a side dish.

What are Salt Potatoes?

Salt potatoes are a very simple dish in which small potatoes are boiled with lots and lots of salt. The salt increases the temperature at which the water boils, which makes the potatoes creamy and delicious. This recipe for BBQ Loaded Salt Potatoes takes these tiny, salty potatoes and tops them off with Hunt’s Hickory Pepper BBQ Sauce, chicken and all the best baked potato toppings to make a fun twist on a local treat that can be either a side dish or a complete meal.

Now I love salt potatoes, but sometimes they can be a little, well, boring. I get tired of having the same side dish at every, single cookout! Maybe this is because I’m not a Syracuse native and can’t fully appreciate the perfection of salt potatoes. And I am sure that purists would be horrified at these additions to the basic potato, salt and butter recipe. But I think these BBQ Loaded Salt Potatoes taste pretty darn good!

How to Make Loaded Salt Potatoes

The first step in making this side dish is to make the salt potatoes. Salt potatoes need to be small, bite sized potatoes. Boil 4 1/2 pounds of potatoes with 2 cups of salt for about 20 minutes until the potatoes are tender. Then drain them in a colander for a few minutes. As the potatoes drain a thin crust of salt will form on the outside of the potatoes, which makes them extra tasty!

I decide to top the potatoes off with some leftover chicken that I had from dinner a few days before. I simply shredded the chicken and mixed in a few tablespoons of Hunt’s Hickory Pepper BBQ Sauce to keep it moist and flavorful. You could also use Instant Pot shredded chicken, leftover rotisserie chicken or pulled pork. I used cold chicken, but you could heat it up if you like. Just take whatever meat you have and use the BBQ sauce to give it some extra smoky taste!

I wanted to loaded up the salt potatoes with all my favorite potato toppings. So I set out bowls of shredded cheese, bacon, chives and sour cream, along with the chicken and Hunt’s Hickory Pepper BBQ Sauce. Once the potatoes were done everyone could pick their own toppings and make the ultimate BBQ Loaded Salt Potatoes.

Personally, I want everything on my potatoes! First I added the chicken.

Then some shredded cheddar cheese.

Then I squirted on a few tablespoons of Hunt’s Hickory Pepper BBQ Sauce.

And then I added a dollop of sour cream right on top.

I finished the whole dish off by sprinkling bacon bits and chives all over the potatoes.

This could be either a side dish or the main event. Taking all the toppings along on a cookout means everyone can add their favorite toppings and enjoy the meal!

BBQ Loaded Salt Potatoes

Ingredients
 

  • Hunt's Hickory Pepper BBQ Sauce
  • 2 cups salt
  • 3 quarts of water
  • 4 1/2 pounds of small new potatoes
  • 2 cups leftover chicken
  • 8 slices bacon cooked
  • 1/2 cup cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chives

Instructions

  • Put 3 quarts of water in a large sauce pan and add the 2 cups of salt. Bring to a boil
  • Once the water is boiling stir it to make sure all the salt has dissolved. Then carefully add the salt potatoes.
  • Boil for 15-20 minutes, until the potatoes are creamy and a fork easily goes into the potatoes.
  • While the potatoes are cooking shred the chicken into small pieces. Combine the leftover chicken with 4 Tablespoons of Hunt's Hickory Pepper BBQ Sauce and mix well. You can heat up the chicken or leave it cold.
  • Chop the bacon and chives.
  • Put the remaining ingredients in small bowls.
  • Drain the potatoes in a colander. Let sit for a two minutes so the water can evaporate and thin crust of salt will form on the potatoes.
  • Put some potatoes in a bowl. Top with chicken, cheese, 2 Tablespoons of BBQ sauce, sour cream, chives and bacon.

Notes

It is important to measure the water and use 3 quarts for boiling the potatoes. The salt to water ratio is key for salt potatoes.
Use a pot that is large for amount of water you are boiling. An 8 quart pot is ideal. If you use too small a pot you will end up with salt all over your stove.
Use pulled pork instead of chicken if you prefer.
