  • Chuck roast: This cut of beef is perfect for slow cooking because it becomes incredibly tender and juicy after simmering for hours. And it is inexpensive too!
  • Beer: Use your favorite. I like to use a nice, flavorful beer like an amber ale or a lager.
  • Brown gravy mix

🥣How to Make Slow Cooker Beer Beef Sliders

  1. Grab your slow cooker and toss in the chuck roast. Pour in the beer, and sprinkle the brown gravy mix and dry onion soup mix over the top. Stir to make sure everything is evenly distributed.
  2. Scatter the sliced onions over the beef mixture. They’ll look like a lot, but they’ll cook down and become deliciously soft and caramelized.
  3. Put the lid on your slow cooker, set it to low, and let it cook for 8 hours
  4. After 8 hours, your beef should be fork-tender and ready to shred. Take it out of the slow cooker and use two forks to shred it into bite-sized pieces. Return the shredded beef to the slow cooker and stir to coat it in all those delicious juices.
  5. Now, it’s time to assemble your sliders! Slice open your slider buns. Place a slice of provolone cheese on the bottom half of each bun, and then pile on the shredded beef. 
  6. Top each slider with a couple of sliced pickles. Then, take two slices of provolone cheese, rip them in half, and place them on top of the pickles in a crisscross pattern. Place the top half of the buns on your sliders. 
  7. If you want to take your sliders to the next level, you can pop them under the broiler for a couple of minutes to melt the cheese and get the buns nice and toasty.

If you have leftover sliders, wrap each slider individually in plastic wrap or aluminum foil. Place the wrapped sliders in an airtight container or zip-top bag. 

Store the sliders in the refrigerator for up to 3 days. They’ll still be tasty after a few days, but the buns might start to get a little soggy.

You can store the beef filling in an airtight container in the fridge for 4-5 days. It also freezes well for up to 2 months. Thaw it overnight in the refrigerator and use it to make more sliders.

  • Chuck roast is my go-to for this recipe because it’s well-marbled and incredibly tender during slow cooking. If you can’t find a chuck roast, look for other cuts like shoulder roast or bottom round.
  • It’s much easier to shred the beef while it’s still warm from the slow cooker. If you let it cool down too much, getting a good shred going can be tough.
  • Get creative with toppings. While I love the classic combination of provolone cheese and pickles, you can try many other delicious toppings. Caramelized onions, sautéed mushrooms, or a spoonful of coleslaw would all be tasty additions to these sliders.
  • Add some hot sauce to the sliders to spice them up a bit.

Ingredients

For assembling sliders

  • 8 provolone cheese slices

Instructions

  • Add the chuck roast, beer, brown gravy packet, onion soup packet, and sliced onions to the slow cooker. Stir the sides around to combine everything.

  • Cook on low for 8 hours or high for 6 hours.
  • Once the beef is tender, remove it, shred it, and return it to the slow cooker, stirring so it is coated in the juice.
