Refreshing Blueberry Mango Smoothie | Vegan

This cool and refreshing blueberry mango smoothie is a delicious healthy smoothie! Blueberries, mangoes and bananas combine with orange juice and coconut milk for the ultimate tropical summer beverage! Made without yogurt it is vegan and dairy free for an easy breakfast or quick snack!

I love smoothies any time of the year, but they are especially good to make in the summer. Fresh fruit abounds and making an energizing smoothie is a great way to use summer produce.

Mango is one of my favorite fruits for a smoothie because it gives a tropical flavor, like in this mango avocado smoothie. And combining mango with fresh or frozen blueberries makes a blue smoothie that is both tasty and pretty!

Key Ingredients

Blueberries – Use fresh or frozen blueberries for the smoothie. If you use frozen ones it will be a little thicker.

Mangoes – Again either fresh or frozen mangoes work well. Depending on what time of year it is frozen mangoes might be easier to find.

Banana – My preference is to use a frozen banana with fresh blueberries and mangoes. That makes for the creamiest smoothie.

Coconut milk – The coconut milk goes well with the mangoes and makes the entire smoothie taste tropical. But you can substitute almond milk or regular milk if you prefer.

Orange juice – The orange juice provides extra liquid for blending up the ingredients and adds a lot of vitamin C and other nutrients.

Blue Spirulina

Using blue spirulina in the smoothie is optional. It adds some extra deep blue color to the drink and makes it prettier. But it isn’t just a food coloring.

Blue spirulina is a pigment derived from blue-green algae. So it also adds protein, vitamins and minerals. But despite being derived from algae it doesn’t add any fishy flavor or taste to the smoothie.

How to Make Blueberry Mango Smoothie

1. Prepare

Wash the fruit and peel and dice the mango and banana.

2. Blend

Put all the ingredients in the blender and blend until it is smooth and creamy.

It is possible you will need to add more liquid to the smoothie to make it blend. If any of the fruit is frozen it will be thicker and might need extra coconut milk, depending on your blender.

If all of the fruit is frozen you will almost certainly need to add extra coconut milk. Continue to blend until you get the consistency that you prefer.

How to Serve

Garnish the smoothie with more blueberries, mint or coconut flakes and serve.

How to Store

This smoothie will keep well in the refrigerator for about 24 hours. It will probably look best if you drink it right away.

Variations and Tips

  • Add 1/2 cup of yogurt if you don’t care about your smoothie being dairy free.
  • Add a scoop of protein powder to make this more protein rich. My favorite protein powder is Garden of Life vanilla.

Ingredients
 

  • 1 ¼ cups fresh or frozen blueberries
  • 1 banana
  • 2 mangoes
  • ¼ cup coconut milk

  • 1 Tablespoon blue spirulina optional

Garnish

  • Fresh blueberries
  • Mint
  • Coconut flakes

Instructions

  • Wash and drain your blueberries.
    1 ¼ cups fresh or frozen blueberries
  • Remove the peel and slice the banana and mangoes.
    1 banana, 2 mangoes
  • Add all the ingredients in the blender.
    ¼ cup coconut milk, ¼ cup orange juice, 1 Tablespoon blue spirulina
  • Blend until you have a smooth and creamy texture.
  • Garnish with more blueberries, mint and coconut flakes if desired.
