I am always looking for quick and simple breakfast ideas. I like a hot breakfast, and have eggs most mornings, either fried eggs, or an egg sandwich or burrito. But on days when I am in a hurry and have to get going quickly I need a solution that doesn’t take much effort on my part. So I was glad when I was asked to try out the new Breakfast Bakes from Bob Evans.
These new products are designed to be a complete meal-in-one – all mixed up and baked to perfection with Bob Evans hash browns. The Breakfast Bakes come in three varieties and can be prepared and ready to eat in 4 minutes. The three varieties are:
- Sausage Egg and Cheese
- Bacon Egg and Cheese
- Southwest
The combination of the hash browns with the egg and cheese is yummy! I like the fact they can easily be eaten on the go, since they are portable. They are baked and not fried, so they are not overly high in fat or calories. My favorite is the Southwest flavor, and they have only 140 calories each. So if I combine them with a piece of fruit like an orange or banana I have a hot, healthy breakfast with very little effort!
If I have a little more time and am not eating on the run they taste great with a little added guacamole and salsa too. All in all these are a nice option to have for breakfast, and I like having a box in the freezer to use when I need a quick go to solution.

I bought the Southwest earlier today, and I really like it! However, it was smaller than I thought it would be, but then again, you get 4 in each box. 🙂

I have to have a warm breakfast during the winter, and fast is always good! It looks really good too.
