My family loves mashed potatoes, but I hate making them from scratch.Â So luckily it is easy to buy refrigerated mashed potatoes in the store now, and I no longer have to feel guilty about how infrequently I serve them!
One of the reasons I havenâ€™t been a big mashed potato fan myself is that when I was growing up my mom served them almost every day.Â I mean literally, 5 out of 7 days a week we had mashed potatoes for dinner.Â And after a while that gets pretty boring.Â Recognizing that basic mashed potatoes are not super exciting Bob Evans, the leading seller of refrigerated mashed potatoes in America, has just launched the Mad About Mashtini Recipe Collection -Â an assortment of gourmet mashed potato topping themes including Mediterranean, French and American Regional, and recipes such as Club, Wildfire and Sweet Swirl.
This is a fabulous way to make mashed potatoes exciting, and even gourmet.Â The recipe selection was just released, but they sent me kit to try out the recipes a month ago, so I could share about it with my readers.Â To make the mashtini even more fun they serve them in a martini glass, filled with mashed potatoes and topped with gourmet ingredients.
The ingredient combinations the chefs came up with are quite inventive.Â For example the Wildfire Mashtini uses popcorn chicken and barbeque sauce, and the Mediterranean Mashtini tops the mashed potatoes with pepperonata, artichokes, grilled chicken and pesto.Â But for my Mashtini party I decided to go with the Taco Mashtini, because I thought this was the one that appeal the most to my family.
So I combined the ingredients, which included tortilla chips, green onions, tomatoes and cheese and made taco mashed potatoes.
The whole thing only took about 15 minutes to prepare, since I was able to do most of the chopping up of the ingredients while the mashed potatoes were in the microwave.Â The recipe from Bob Evans lists the preparation time as 30 minutes, but I think their estimates are overly pessimistic, these were quick and easy to make.
The final result was tasty, and was a big hit with my family.Â My 19 year old especially loved it, and there were no left overs.Â Of course part of the attraction was the use of the martini glasses to serve, and it is amazing about how changing the presentation of a dish can make it more exciting.
