This Candy Corn Fruit and Yogurt Parfait is a healthy Halloween treat, with just a little bit of candy. By layering fruit in Mason jars you can create a dessert that looks like candy corn but that can be eaten guilt free!
Halloween is one of my favorite holidays, and it is the perfect holiday for making all kinds of treats. Unfortunately most of these treats involve lots of candy, which means they aren’t healthy at all.
It doesn’t hurt to have candy for a snack sometimes, but around Halloween the amount of candy and sweets available can seem overwhelming. So a healthy Fruit and Yogurt Parfait makes a nice change of pace and gives you the change to indulge in a Halloween treat with less guilt.
How to Make a Fruit and Yogurt Parfait
The concept of this Halloween snack is very simple. I wanted to create a layered fruit parfait that mimicked the look of a piece of candy corn. I decided to make the fruit and yogurt parfait in a Mason jar, because a small jar is the perfect size. The bottom layer needs to be yellow, so I used sliced mangoes for a bright yellow color.
Some other yellow fruits that would work well for the yellow layer are pineapple or bananas. Bananas aren’t quite as bright, but it makes sense to pick fruit you and your kids will actually eat than to get too hung up on the perfect color! Then I added mandarin orange slices to make a layer of orange.
Cantaloupe, papaya or apricots would be other good choices of orange fruit. The white is made by topping the entire parfait off with a layer of vanilla Greek yogurt.
The candy corn on top of the fruit and yogurt parfait is optional, although it does make it nice and colorful. The candy corn also makes it appeal to kids, who love the idea of a little candy to mix into their yogurt.
Personally I think candy corn is pretty to look at but too overwhelmingly sugary to actually eat, although I am the only one in my house who feels this way!
This is a perfect make ahead treat, either for an afternoon snack or for a quick and easy breakfast. You can slice the fruit and prepare the parfaits a few hours in advance, or even overnight and store them in the refrigerator with lids on the Mason jars.
One thing to be aware of if you are making the parfaits in advance is that the candy corn will bleed into the yogurt it if you let it sit for a while. So you need to leave off the candy corn and add it right before serving or the parfait will not look as pretty.
