With St. Patrick’s Day coming up I have been doing some cooking with Irish booze. Last weekend I made these delicious Guinness Chocolate Chip Cookies!
The booze in these cookies is cooked for about 15 minutes with sugar to make a thick Guinness syrup, which adds just a hit of richness and flavor to the cookies. If you don’t know what the secret ingredient is you would never guess that is is Guinness.
Pumpkin is one of my favorite fall flavors to cook with. It adds color and flavor to a dish and takes a recipe from ordinary to extraordinary. Last year I made tasty Pumpkin Oatmeal Chocolate Chip Cookies, and this fall I wanted to try out a new Pumpkin Cookie. I came up with this recipe for Pumpkin Date Cookies.
This recipe uses pumpkin and apple sauce in place of most of the butter, so it is very moist and chewy. The insides of the cookie have a cake like texture. I added dates and pecans along with spices to give the cookies a nice burst of flavor.

The Creative Cookie Exchange blog theme for this month is decorated cookies. Originally I was thinking of making holiday cookies, but then I saw these adorable Chemistry cookie cutters, and I just decided to forget the holidays and go for a science theme.

Pumpkin and chocolate are one of my favorite flavor combinations, and to make these White Chocolate Pumpkin Bars I used white chocolate instead of dark chocolate for a totally different taste!
These take a little effort to prepare, because you have to make two separate batters and swirl them together for layers of white chocolate and pumpkin. But the result is worth the effort! The white chocolate layer is more cake like, and the pumpkin layer is more dense and chewy, for a great combination of tastes and textures.

These Brownie Sundae Cookies are a perfect mini dessert!
This dessert has flourless Brownie Cookies as a base. The cookies are a family favorite, because they are so big and chewy. But the batter is very thin and runny, so it spreads all over the cookie sheet. So I had the idea to use Mason jar lids as a mold, so that the batter would be contained and the cookies would be perfectly circular.
