I love yogurt, especially with fruit. Today I made this Raspberry Cherry Yogurt Parfait, and it is a delicious snack.
To create this, I made a Raspberry-Cherry sauce and then layered it with Vanilla Bean Yogurt. The sauce was made by combining raspberries and cherries with a little bit of water, and then cooking it down to release the liquid.

Looking for a quick weeknight dinner? My favorite weeknight meals are ones that can be made in one pan, like this recipe for Smothered Pierogies and Kielbasa Skillet.
My mother recently gave me her old cast iron skillet, so I have been enjoying making one dish recipes. This recipe features potato filled pierogies cooked with vegetables and sausage for an all in one stove top casserole.
Pineapple Kiwi Smoothie Bowl
Spring is my favorite season of the year! It is the perfect time to make a fresh, healthy, fruit filled meal, like this tropical Pineapple Kiwi Smoothie Bowl.
I have seen Smoothie Bowls all over Pinterest, so I decided I had to make one for my family and I. We love smoothies, and a smoothie bowl is a great way make one into a more substantial meal, by serving it in a bowl and adding healthy toppings. I topped this smoothie bowl off with kiwi, banana and chia seed, which adds a nice substantial texture to the bowl.
Easy Shrimp Pad Thai
This Easy Shrimp Pad Thai recipe is one of my family’s favorite dinners! It is quick to make, and can easily be made on a busy weeknight in less than 30 minutes so you can have dinner on the table quickly.
Pad Thai can seem like a complicated meal, but it is really not that difficult. The recipe is long, but almost all the work is just chopping up different vegetables. The key to making this Shrimp Pad Thai is to take the time to chop everything up and get all the ingredients ready to go because it cooks quickly. I like to put all the ingredients in bowls next to the stove, and then just dump them into the pan one at a time.
Spring Rolls with Black Bean Noodles
Spring Rolls are a great way to enjoy vegetables. There is something about seeing vegetables all sliced thinly and wrapped up neatly that makes them more appealing, and like most Americans I could stand to eat more veggies. So I recently decided I should make Spring Rolls at home, and made these Spring Rolls with Black Bean Noodles.
Once I decided to make the Spring Rolls I turned to Pinterest to learn how. I quickly found this Pin which promised step by step instructions on how to wrap spring rolls. Luckily it isn’t very difficult!

Chocolate Covered Pretzels for St. Patrick’s Day
The combination of sweet and salty is one of my favorites, so I love chocolate covered pretzels. They are very easy to make, and it is easy for kids to help out in the creation of these treats.
I decided to make a batch of St. Patrick’s Day themed pretzels last week, by using two different colors of green chocolate and sprinkles to decorate the pretzels.

St. Patrick’s Day will be here soon, and what better way to celebrate than with a healthy green smoothie, like this Matcha Pear Green Smoothie.
I bought some Matcha Green Tea Powder a few months ago, because of its antioxidant properties. I am trying to eat more healthy foods, and I have heard lots of people raving about the advantages of green tea powder, so I figured why not give it a try? I am not a big fan of green tea, so after I bought it the powder just ended up sitting in my pantry until I decided to use it in this smoothie.
Chocolate Peanut Butter Trifle Recipe
This dessert is super easy to make, but it looks fancy and tastes wonderful. Trifle is traditionally made with fruit, but peanut butter and chocolate are good too.
I added peanut butter to vanilla pudding to give it a nice light peanut butter taste. Then chocolate pudding and peanut butter pudding are layered with whipped cream and chocolate cake for a delicious combination of flavors that makes the trifle taste like a giant peanut butter cup.
