Making lunches for school can be a challenge! Even though I homeschool my kids there are many days when we need to make a brown bag lunch, since we attend weekly classes and go on field trips.  My lunch packing is more challenging because my kids are not big fans of sandwiches.   In fact my daughter Eleanor won’t eat recipes with bread at all.  She does however like lunch meat and yogurt.  So we made Pastrami Cheese Rollups along with a Yogurt Fruit Parfait for a perfect portable lunch.

With Labor Day fast approaching many people are planning outdoor parties for one last big blast before Fall officially arrives!  This is a great time of year to go beyond the standard steaks and burgers and do something different on the grill, like a clam bake.

For a clam bake on the grill all you have to do is layer clams, corn and potatoes in a Reynolds Bakeware Pan topped with aluminum foil.  Then at the end of the day there is no clean up, and the entire meal is in one easy to serve pan.

It seems like food prices just keep going up, so I am always looking for coupon deals that will let me save money on groceries. Using coupons can help me stretch my food money while still giving my family tasty food to eat. Kraft frequently has printable coupons available on products my family eats every week, and this week I used those coupons to add a twist to a family favorite meal and make Chicken Bacon Quesadilla with Peanut Sauce.

Like many moms I have go to quick meals that I know my family will enjoy, like Chicken Quesadillas. But those old standby meals can get boring. So when I saw that Kraft had an online coupon for bacon this week I decided to change things up, and add bacon to quesadillas along with using Planters Peanuts to make a quick peanut sauce for dipping.

My family and I love pasta, but sadly it isn’t always a healthy choice for dinners.  Lately we have been trying to cut back on the amount of refined carbs we eat, and one great way to do that is to replace pasta with “noodles” made from a healthy vegetable like squash.  I recently made the replacement in one of my favorite pasta dishes, the classic Cincinnati Chili.

It tasted pretty good with zucchini noodles, and then I didn’t feel guilty about adding a decent amount of cheese on top! To make the noodles I used the Veggetti, a new kitchen tool I was recently asked to review.  This is a simple little device that is designed to quickly turn vegetables into healthy spaghetti.

Recently Redpack Tomatoes sent me some tomatoes and delicious recipe for using canned tomatoes in summer salads. I like this idea, because around here vine ripened tomatoes are still at least a month away, and the tomatoes at the grocery store are usually picked before they ripen, so they lack flavor.

Canned tomatoes are picked ripe, which makes them juicy, healthy, and economical. Because of that, they are perfect for salads all year round. The Redpack test kitchen has developed some delicious salad recipes which incorporate summer fruit, like this Chicken Blueberry Chopped Salad.

Summer is the perfect time for salads!  They made a tasty main dish, and best of all they are easy to make ahead and have waiting after a busy day.  This Raspberry Shrimp Salad is a simple and cool supper for summer.

I made a simple vinagrette dressing for this using Raspberries, oil and vinegar, but you could make the recipe even simpler by purchasing a Raspberry Dressing.  But even with making your own dressing this can be on the table (or in the refrigerator) in less than 15 minutes.

Strawberry season will be here soon. I love to pick strawberries and make delicious desserts, like Strawberry Shortcake and Strawberry Fool.  Strawberry Fool is a dessert made from strawberries, whipped cream and sugar, so it is like shortcake without the cake!

This is a traditional English dessert that dates back to the 1600s.  I first made this years ago when I was studying Colonial America with my children, and ever since they have requested it every strawberry season.  The combination of strawberries and cream is always popular, and is pretty easy to make.

Making dinner in 15 minutes or less is quite a challenge, but there are days when that is all the time I have.  Spring seems to be especially busy, as all the my kids’ activities ramp back up with the return of good weather.  This meal is a quick chicken dinner that goes together fast.

It is tough to make a 15 minute dinner without taking some shortcuts, and in this recipe I use black bean soup to make the sauce thick, rich and tasty without having to simmer it all day.  The flavor from the soup compliments the mushrooms and onions and makes it taste delicious.

Most breakfast casseroles I see call for hash browns, and I thought it would be fun to make one using sweet potato hash browns.  I love sweet potatoes and have been cutting one up to saute for breakfast and adding an egg on top for a few weeks.  So this is a make ahead version of that sweet potato hash, perfect for Easter brunch.

These Irish Coffee Muffins are a great way to enjoy a seasonal St. Patrick’s Day treat.  Most Irish Muffin recipes I have seen are for Irish Soda Bread Muffins, which are okay, but for me Irish Coffee is better!  These muffins combine coffee, Irish Whiskey and cream for a delicious and different taste.

These muffins were very light and moist, much so more than most muffins that I have made!  I think it is because they are made with sour cream instead of milk.  They taste subtly of whiskey, but the taste is not overwhelming at all, there is just a hint of the flavor.

Delicious Pies for Pi Day

March brings one of my favorite holidays, Pi Day! This is the perfect holiday because it combines two things I love, food and math. The day is of course to celebrate the irrational number π, which is the ratio of the circumference of a circle to its diameter. But the best way to celebrate it is by eating pie, which takes no actual knowledge of geometry.

Now there are lots of different kinds of pie, including hand pies, meat pies, crustless pies and even pizza. But for me pie means dessert, which brings up the important question: Cream Pie or Fruit Pie?

This is a delicious chocolate cake with a rich raspberry filling.  Honestly I usually just make cakes from a mix, but last week I decided to make a chocolate cake from scratch, and it was much better than a cake mix.  The recipe has sour cream, and it mades the cake layers nice and moist.

Pumpkin Roll filled with cream cheese is a traditional holiday recipe, and it is even better when you add chocolate chips to make it more decadent!

Pumpkin and cream cheese combine in this cake to make a delicious combination of flavors. Cake rolls can seem intimidating, but they really are not hard to make, and if the roll cracks a little it doesn’t matter, because they still look and taste amazing! I stirred mini chocolate chips into the cake batter before I cooked it, so that the chocolate and pumpkin flavors melded together.
