Sausage Mushroom Zucchini Casserole Recipe

This is a quick and easy casserole that is very tasty! I frequently make pasta dishes with sausage, but I have been trying to use more whole grains, so this time I made the sausage using rice instead of pasta.  I used brown rice, which gives it more fiber and also added a nice nutty flavor to the dish.

I like quick dinner recipes, because while I enjoy cooking many times I just don’t have the time to make a complicated meal. Lately it seems like I never have more than 30 minutes to make dinner, because we are so busy. So I was excited to try the new Saute Express® Saute© Starter  because it is all about making dinner prep easier!

The idea behind this new product is that Land O Lakes has done a lot of prep work already, and combines butter, oil, herbs and seasonings into a convenient block, that can be easily melted and used to saute chicken, pork or fish.  So instead of mincing garlic and trying to find 5 different spices in the pantry I can just throw a square in the pan to melt, and then saute my meat.

Game Day Dessert with Snickers and Milky Way Bites

Football Game Day is always fun for my family! This year our teams aren’t doing so well though. Our local college team is Syracuse University, and they have won one game all year, and are playing the #3 ranked Clemson Tigers this weekend, which doesn’t sound promising. And in the NFL we are huge Giants fans, but they are still searching for their first victory.

But even with few victories to celebrate watching the game is still enjoyable. We aren’t able to attend games often, so for us tailgating usually occurs on our deck. Anything we eat during a game has to be portable, so it is easy to eat while we watch.  These Layered Mars Bite Cakes are perfect, because they are easy to make in their own individual Mason jars.

Over the past few months I have made a commitment to eat better and get in shape.  For me the hardest meal of the day is lunch, because it is so easy to get busy, forget to eat, and then just decide to grab something quick and unhealthy.  One of the things that works for me is to have something prepared ahead of time and waiting in the refrigerator, like tuna salad.

I have been trying hard to lose weight this summer, but sometimes it is hard to resist desserts!  My 17 year old had crepes on a trip to Montreal this spring, and has been bugging me to make them for her.  Once I did a little research I realized that crepes are actually pretty low in fat, it is just adding rich fillings and whipped cream that make them calorie laden.  So I made fruit crepes using fruit and some chocolate syrup for a delicious low calorie dessert.

I realized recently that I had a box of quinoa in the pantry that had been sitting unopened for at least 9 months.  I read online months ago that quinoa was a healthy food, and bought some, but then never did anything with it!  So I decided I needed to test it out.

My oldest daughter has been become a vegetarian, and quinoa is an excellent food for vegetarians.  It looks like a grain, but it is really a seed, and is unusually high in protein for a plant based food.  So I made a southwest inspired salad using the quinoa, and it tasted very good.  The quinoa has a very mild, nutty flavor, so the predominate taste was the vegetables and spices I added.

Even my husband had seconds, and he is not a fan of similar dishes made with couscous or bulgar wheat. Get tips on picking the best avocados for your salad.

This time of year zucchini is one of the easiest vegetables to find around here.  It is so prolific!  My husband and I like zucchini, but our kids  not so much. So I am always looking for ways to make it tastier for them, rather than just sauteing it. I’ve tried making Chocolate Cake with it, but while that tastes great it isn’t something I can serve as a vegetable with dinner.  So this week I added a little bit of bacon and cherry tomatoes to my zucchini for a different taste.

Peach Watermelon Pineapple Fruit Ice Pops

Summer is the time of year for popsicles!  The great thing about making your own ice pops is that it is very easy, and you can use all natural ingredients and create your own flavors and designs. You can use yogurt to make thicker and more creamy pops, but I also like the ones that are just fruit, with no added sugar or other ingredients.  Here are some Peach-Watermelon-Pineapple pops I made recently.

I literally made them out of leftover fruit that was in the refrigerator.  The leftover slice of watermelon or the last few pieces of pineapple sometimes end up sitting in the refrigerator, and this is a great way to use them up in a new and different way that is kid friendly.  Plus when it is hot out it is just more fun to eat your fruit as a popsicle.
