🥣How to Make Cracker Barrel Meatloaf

  1. Mix – Combine the ground beef, onion, green pepper, crushed crackers, shredded cheese, eggs, milk, salt and pepper in a mixing bowl. Mix thoroughly but don’t overmix.
  2. Shape – Shape the meat mixture into a loaf shape and put it on an aluminum foil lined baking sheet.
  3. Bake – Bake in a preheated 350 degree F oven for 30 minutes.
  4. Glaze – Mix the ketchup, brown sugar and mustard in a bowl. Spread the ketchup mixture all over the top of the meatloaf.
  5. Bake More – Bake it for an additional 30-40 minutes, or until it reaches 165 degrees F internally.
  6. Rest – Let the meatloaf rest for 10 minutes before slicing and serving.

Ingredients
 

  • 2 pounds ground beef
  • 1/2 onion diced
  • green pepper diced
  • 1 1/2 sleeves of crushed Ritz crackers
  • ¾ cup shredded sharp cheddar cheese
  • 3 eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Glaze Ingredients

  • 3/4 cup ketchup
  • 2 ½ tablespoons brown sugar
  • 1 1/2 teaspoon yellow mustard

Instructions

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the ground beef, onion, bell pepper, eggs, crushed Ritz crackers, cheese, milk, salt and black pepper.

  • Remove from oven and let rest for 10 minutes.
  • Slice and serve!

    Delish! Made per recipe taking care not to overmix. It did fall apart a little when cut but I believe I should have let it sit a bit longer before cutting.
    I can’t swear to the Cracker Barrel similarity but it’s for sure a darn good meatloaf!

    Ingredients

    1 lb. 90% lean ground beef
    1 cup dried bread crumbs
    1/2 cup diced yellow onion
    1/2 cup milk
    1 large egg beaten
    2 tbsp. ketchup
    1 tbsp. Worcestershire sauce
    1 tsp. dried parsley leaves
    3/4 tsp. salt
    1/2 tsp. garlic powder
    1/4 tsp. ground black pepper
    For the Topping:
    1/4 cup ketchup
    2 tbsp. packed light brown sugar
    1 tbsp. red wine vinegar
    Instructions
    Preheat oven to 350° Fahrenheit.
    In a large bowl, add the beef, bread crumbs, onion, milk, egg, 2 tablespoons ketchup, worcestershire sauce, parsley, salt, garlic powder, and pepper. Use your hands to mush and mix these ingredients together until well combined.*
    Add the meat mixture to a loaf pan. Pat the meat down into an even layer.
    In a small bowl, add ¼ cup ketchup, the brown sugar, and vinegar. Stir to combine. Pour the sauce on top of the meatloaf and spread it into an even layer.
    Bake uncovered for 55 minutes.
    Let the meatloaf rest for 8-10 minutes before serving (or it may fall apart).

    I made this, with a mix of beef and pork, and a couple of anchovies. A hint of cayenne too. The crackers make for an excellent texture. I shall make this again. Thumbs up.
