What are Fingerling Potatoes?

They are small potatoes that are long and slender, like a finger. They are usually about 2-3 inches long and an inch in diameter. These come in many color varieties, including red, yellow, and purple potatoes.

They are different from baby potatoes because they are fully grown and are harvested when they are mature. They are a firm texture and mild taste.

Fingerling potatoes – These are the most crucial ingredient. I used yellow ones, which are soft and creamy inside after cooking.

Olive oil – A little bit of olive oil is used to help the food brown and crisp. While an air fryer cooks with less oil, most vegetables taste better with some added oil.

Seasoning – Season with salt, black pepper, and parmesan cheese. This allows the flavor of the potato to shine through. Although I prefer to keep it simple, you could add some garlic powder, Italian seasoning, or another seasoning blend.

How to Make Air Fried Fingerling Potatoes

1. Prep

Wash the potatoes and pat them dry with a kitchen towel. Then cut them in half lengthwise. You could also cook them whole, but I prefer the extra crispy surface you get when you halve them.

Then drizzle them with olive oil and season potatoes with salt, pepper, and parmesan cheese. Toss them, so they are well coated in the seasoning.

2. Air Fry

Put the potato halves in the air fryer basket, keeping them mostly in a single layer. My air fryer can easily fit 1 pound of fingerling potatoes, but if you have a smaller one, then cook in batches.

Air fry them for 12-15 minutes, pulling the basket out once to flip them over. They are done when they are golden brown on the edges and soft inside. A fork will go in easily when they are done.

Serving Ideas

Garnish them with fresh rosemary, parsley, or thyme for added flavor. They are delicious served as is or with melted butter for dipping them. Sprinkle them with more parmesan cheese if desired.

How to Store

Absolutely. They will be more like mini baked potatoes if you roast them whole. If you cut them in half, they will have more crispy edges. So it comes down to personal preference. If roasting them whole, add 2-3 minutes more cooking time.

No, there is no need to peel the skin of fingerling potatoes. The potato skin is edible and contains fiber and nutrients.

Do fingerling potatoes taste different?

They have a mild buttery taste, which is very similar to standard potatoes.

Ingredients
 

  • 1 pounds fingerling potatoes about 10
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 2 tablespoons Parmesan cheese

Instructions

  • Scrub potatoes and pat them dry with a kitchen towel. Then cut them in half lengthwise.

  • Put them in a medium bowl and drizzle with the olive oil.
    1/2 tablespoon olive oil
  • Sprinkle on the salt, ground pepper, and parmesan cheese.
    1/2 teaspoon salt, 1/2 teaspoon black pepper, 2 tablespoons Parmesan cheese
  • Air fry at 400 F for 8 minutes. Then take the basket out and flip them over.
  • Air fry for another 5-8 minutes until they are browned and crispy on the outside.

Notes

Sprinkle the cooked potatoes with fresh parsley, thyme, or rosemary.
If roasting them whole, add 2-3 minutes more cooking time.
