Buttermilk Pancakes with Roasted Apples

Pancakes are the traditional food for Fat Tuesday so here is my favorite buttermilk pancake recipe.  I try to always have a quart of buttermilk in the refrigerator so we can make buttermilk pancakes from scratch. They taste so much better than pancakes made from a mix!  I don’t like the taste of syrup and prefer to serve fruit on my pancakes. In the summer it is easy to just slice berries on them, but in the winter this recipe for roasted apples with cinnamon works well.

Roasted Apples

Roasted Apples
Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 3 apples
  • 1/2 Tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 teaspoon butter
  • 1 Tablespoon brown sugar
  • 2 Tablespoon walnuts

Instructions

  1. Preheat the oven to 375. Slice and core the apples and sprinkle with the lemon juice and cinnamon. Put in a baking dish and add the butter.
  2. Roast for 15 minutes, stirring once. Then add the sugar and walnuts and roast for another 5 minutes. Serve on pancakes
