This recipe combines juicy and tender pork cubes with pineapple and veggies for an easy to make and cook dinner that your entire family will enjoy. Grilled Pork Kabobs

Kabobs are one of my favorite things to grill in the summer and here is why:

  • Kabobs combine meat with vegetables or fruit, so I don’t have to make a bunch of side dishes with dinner.
  • Since the meat is cut into small pieces it cooks quickly and there is no waiting around for dinner.
  • Kabobs are just fun to eat!

There is only one drawback to making kabobs and that is that you need to marinade the meat. Marinading the meat makes it more tender and adds a lot of flavor, which is necessary for quick grilling over high heat. But marinading also adds about 30 minutes to meal prep time – which is not ideal when you are looking for a 30 minute meal.

Luckily Smithfield® has the answer – marinated fresh pork. They package their fresh pork cuts with marinades made from all real, all natural ingredients for an easy, flavorful meal. And these products are easy to find at Walmart. They have a bunch of different marinade flavors available, like Smithfield Garlic & Herb Loin Filet and Smithfield Rotisserie Tenderloin, so you can pick the flavor that your family will enjoy most.

I decided to buy an Smithfield Applewood Bacon Loin Filet to use for making my pork skewers. This filet was perfectly marinaded and perfectly seasoned so all I had to do was cut it into cubes and add it to skewers. Not having to marinade the meat means my delicious, hassle-free meal was ready in no time.

Once I had my Smithfield Applewood Bacon Loin Filet I needed to get some other ingredients to cook along with the pork. I wanted a quick and easy meal, so I knew I didn’t want to add too many ingredients and complicate my preparation. I settled on four things to complement the pork.

Pineapple – I love the combination of pork and pineapple. The sweet taste of pineapple only gets better when it is grilled as it caramelizes beautifully! Plus adding a fruit to the kabobs makes them more kid friendly.

Peppers and Onions – These two vegetables are excellent for most kabobs. They are easy to cut into pieces that fit on the skewers and they hold up well to grilling. I used orange peppers, but red or yellow would work just as well.

Bacon – Since the pork was already flavored with bacon I thought it would be fun to double down on the bacon flavor. My family is of the opinion that more bacon makes every meal better. And adding bacon makes them double pork kabobs!

Making Grilled Pork Kabobs

Making the pork kabobs is quick and easy. First I cut the peppers and onions into pieces about an inch thick and put them in bowls. Then I chopped the bacon into 1 inch pieces.

Then I peeled and cored the pineapple and cut it into cubes. It is good to try to make the pieces evenly sized so that they all cook at the same rate.

Lastly I took the marinated pork out of the package and cut it into 3/4 inch thick pieces.

Then I threaded all the ingredients onto skewers and in 10 minutes I had dinner ready to go on the grill. There are two key things to keep in mind when constructing the perfect pork skewers for grilling –

  • Do not squish the ingredients too closely together. If you leave just a tiny bit of space between the ingredients on the skewers it will allow the heat to circulate between them and cook all the ingredients. This is especially true for meat like the pork and the bacon.
  • Try to keep the pieces of food of a uniform size. This will help the kabobs cook more evenly. Again this is most important for the pieces of meat. If you have some small pieces of pork mixed in with some large ones the smaller ones will end up being overdone. 

If you keep those two things in mind you should have delicious kabobs!

How Long Does it Take to Cook Pork Kabobs

Cooking time is going to be dependent on your grill and how thick you made your cubes. I was hungry, so I made my cubes on the smaller size!  My grill runs off propane and I cooked my kabobs on medium to low heat. The kabobs cooked for 10 minutes and then I rotated them and grilled them for another 10 minutes. I tested the pork kabobs with my instant read meat thermometer and they were well over the minimum 145 F required for pork. Don’t forget to check and make sure the bacon is cooked too. You can’t really test that with a meat thermometer, but it should look a little bit crispy.

Grilled Pork Kabobs

The resulting pork skewers are grilled to perfection. The pork pieces were nice and brown and the pineapple was hot and sweet. These kabobs don’t need any extra sauce on them. The pork is juicy thanks to the pre-made marinade and the drippings released as the bacon cooks flavor the onions and peppers. This is a delicious, hassle-free meal, full of real, fresh ingredients that is perfect for a busy weeknight!

My family loved this meal! Everyone asked for seconds and there were no leftovers at all. Even the few bits of pork and pineapple that fell off the skewers were gobbled up my my kids. Ingredients
 

  • 2.5 pound Smithfield Applewood Bacon Loin Filet
  • 2 bell peppers red, yellow or orange
  • 1 large onion
  • 8 ounces bacon
  • 1 pineapple

Instructions

  • Preheat your grill.
  • Take the Smithfield Applewood Bacon Loin Filet out of the package and cut into cubes 3/4 of an inch to an inch in size.

  • Cut the bell peppers and onion into 1 inch pieces. Dice the bacon into 1 inch sections. Core and peel the pineapple and cut it into 1 inch cubes.
    2 bell peppers, 1 large onion, 1 pineapple, 8 ounces bacon
  • Alternate the pork, bacon, peppers, onion and pineapple on skewers until all the pieces are used up.
  • Grill the skewers on your grill for about 20 minutes until the pork is done, turning the skewers once halfway through the cooking time.

Notes

Cooking time might vary depending on your grill. The pork should reach 145F and the bacon should look done.
If you use wooden skewers you will need to soak them in water for 30 minutes before adding the ingredients to the skewers. Or just save time and use metal skewers!
