Now that it is January cold weather is really settling in around here!  It is the perfect time to warm up with comfort foods like Marie Callender’s pot pies, which deliver a true sense of homemade.

And to counteract the weather I like to pair my pot pies with a Tropical Fruit Salad – an excellent reminder that warmer weather will come, eventually!  It is easy to put together a fresh fruit salad while the pot pies are baking, and the fruit provides a nice sweet accompaniment to the toasty warm pot pies.

For this salad I used strawberries, which are one of my family’s favorite summer fruits, and to make it more exotic I added papaya and starfruit. If you have never tried starfruit you should, because it is delicious!  My kids love it, and its cool shape always makes a fruit salad look more fancy. It has a nice citrus flavor, and it doesn’t have to be peeled, you just slice it and put it in the salad.

I juiced a lime and drizzled the fruit with lime juice and sprinkled some mint on it, for a simple fruit salad that provides lots of color and flavor to the meal. And when we eat it we can close our eyes and imagine we are on a warm tropical island and forget the snow piling up outside the window!

They do make some large family sized pies, but I like to buy the smaller 16 oz ones, so that each person can enjoy their favorite kind.  My daughter loves the Creamy Parmesan Chicken Pot Pie, while I prefer the Cheesy Chicken and Bacon Pot Pie and my husband always wants the Beef Pot Pie.

Which ever one you prefer it is easy to just put them all on a tray and bake them in the oven for an hour, and then dinner is ready. The golden flakey crust and vegetables mixed with gravy are the perfect comfort food for a cold and snowy winter day.

Tropical Fruit Salad

Ingredients
 

  • 1 pint strawberries
  • 1 papaya
  • 1 star fruit
  • 1 lime
  • 3 Tablespoons mint leaves

Instructions

  • Slice the strawberries in half.
  • Cut the papaya and scoop out the seeds, then slice into chunks.
  • Slice the star fruit crosswise and take the seeds out.
  • Juice the lime and pour over the fruit, then sprinkle with mint.

  2. My family lo-oves pot pies for winter dinners. And I think a fruit salad is perfect for a cold winter meal because it reminds me of happy warm days.

  3. I love starfruit but it’s so hard to find around here! So often the focus is on the main dish and the sides get short changed. At least that’s how it tends to be in my house. I think it’s a great idea to get some help with the main dish now and then and concentrate on a killer side.
