This chicken recipe is quick and tastes very different from most things I make. I like the combination of flavors because the prunes make it sweet, but not too sweet. It is a great meal to use up leftover chicken. My husband doesn’t like couscous, so I serve it over rice, even though couscous would be more Moroccan.

Moroccan Chicken Recipe

Ingredients
- 2 Tablespoon oil
- 1 onion, sliced
- 1 1/2 cups cooked chicken
- 1 can diced tomatoes
- 1/2 cup water
- 8 prunes, diced
- 1/4 teaspoon allspice
- 1/2 teaspoon tumeric
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 1/4 cup parsley
Instructions
- Heat oil in skillet and add onions. Brown for 5 minutes.
- Add all the remaining ingredients except parsley. Cover and cook for 5 minutes over medium heat.
- Uncover and simmer for another 10 minutes until the dish is nice and thick. Top with parsley and serve over rice or couscous.
