Moroccan Chicken

This chicken recipe is quick and tastes very different from most things I make.  I like the combination of flavors because the prunes make it sweet, but not too sweet. It is a great meal to use up leftover chicken. My husband doesn’t like couscous, so I serve it over rice, even though couscous would be more Moroccan.

Ingredients
 

  • 2 Tablespoon oil
  • 1 onion sliced
  • 1 1/2 cups cooked chicken
  • 1 can tomatoes diced
  • 1/2 cup water
  • 8 prunes diced
  • 1/4 teaspoon allspice
  • 1/2 teaspoon tumeric
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/4 cup parsley

Instructions

  • Heat oil in skillet and add onions. Brown for 5 minutes.
    2 Tablespoon oil, 1 onion
  • Add all the remaining ingredients except parsley. Cover and cook for 5 minutes over medium heat.
    1 1/2 cups cooked chicken, 1 can tomatoes, 1/2 cup water, 8 prunes, 1/4 teaspoon allspice, 1/2 teaspoon tumeric, 1/2 teaspoon cinnamon, 1 teaspoon salt
  • Uncover and simmer for another 10 minutes until the dish is nice and thick. Top with parsley and serve over rice or couscous.
