This is a hearty vegetarian taco filling.  Since most vegetarian taco fillings are based on beans this makes a nice change. Plus it is super quick to make, since the most time consuming part is chopping all the veggies and dinner can be ready in 20 minutes.

  • 2 Tablespoon olive oil
  • 1 poblano chile, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1/2 onion, sliced
  • 2 portabella mushrooms, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 8 taco shells
  • 1 cup shredded cheese
  • 1/4 cup cilantro


  1. Heat the oil in skillet and add the chile, onions, peppers and mushrooms. Saute mixture about 5 minutes. Mix in cumin and salt.
  2. Serve in taco shells topped with cheese and cilantro.
