This is a hearty vegetarian taco filling. Since most vegetarian taco fillings are based on beans this makes a nice change. Plus it is super quick to make, since the most time consuming part is chopping all the veggies and dinner can be ready in 20 minutes.

Ingredients
- 2 Tablespoon olive oil
- 1 poblano chile, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1/2 onion, sliced
- 2 portabella mushrooms, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 8 taco shells
- 1 cup shredded cheese
- 1/4 cup cilantro
Instructions
- Heat the oil in skillet and add the chile, onions, peppers and mushrooms. Saute mixture about 5 minutes. Mix in cumin and salt.
- Serve in taco shells topped with cheese and cilantro.
