Here is the recipe I made yesterday to use up some of our leftover ham and pineapple. I used a recipe from allrecipes.com as a base, but I modified it a fair bit to add some veggies and fresh pineapple. It was tasty, and it was pretty quick to make also.
Pineapple Ham and Rice
Ingredients
- 2 Tablespoon olive oil
- 1 onion chopped
- 1/2 red pepper chopped
- 1 cup rice
- 2 cups water
- 2 cups cooked ham cubed
- 2 cups pineapple chopped
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1 Tablespoon lemon juice
- 1 teaspoon ground mustard
Instructions
- Sautee the onion in the olive oil for 5 minutes. Add the red pepper and cook for 2 more minutes.2 Tablespoon olive oil, 1 onion, 1/2 red pepper
- Add all the remaining ingredients and bring to a boil. Cover, reduce heat and let steam for 25 minutes.1 cup rice, 2 cups water, 2 cups cooked ham, 2 cups pineapple, 1/4 cup brown sugar, 1 teaspoon salt, 1 Tablespoon lemon juice, 1 teaspoon ground mustard
