Pulled Pork Salad

I have been eating lots and lots of salads lately in my quest to lose weight.  It seems to be working, since I have lots 15 pounds since June, but I have found I need variety in my salads. I mean I love spinach, but not 7 days a week!  So when I had the chance to review some of the wide variety of salad greens from Organic Girl I figured it was a perfect fit for me.

Organic Girl Salad Greens

Organic Girl has many, many different types of greens, that are all organic, wholesome and tasty.  Variety does more than just make salads more interesting, it also means you get a wide variety of nutrients in your diet.

I received the I Heart Baby Kale Mix, which includes baby kale, tango, baby spinach, baby green chard, green romaine, baby green oakleaf lettuce, along with the Five Happiness Mix, which has baby bok choy leaves, baby red chard, tango, mizuna, baby arugula, baby spinach, baby green chard, baby green romaine and baby green oakleaf lettuce.  Both were delicious, and I enjoyed trying such a well rounded mix of salad greens.  I always use organic greens in my salad, to avoid as many chemicals as possible.

Salad with Organic Girl Greens

I tend to just take a few vegetables from the refrigerator and add it to my salad greens, sometimes with meat and sometimes not.  For this salad my husband and I had gone out to dinner the night before, and brought home some pulled pork, which made an excellent topping for my salad.  Next time I make Instant Pot pulled pork I am going to make extras for leftovers!

Pulled Pork Salad Recipe

Ingredients:

  • 2 c. Five Happiness Mix
  • 1 hard boiled egg
  • 1/4 c. red onion
  • 1/4 red pepper
  • 1/2 c. pulled pork

Directions:

  1. Chop the veggies and mix with the salad greens.
  2. Top with pulled pork.
