Shrimp Scampi with Tomatoes

My family loves seafood, so I make sure I serve it for a dinner regularly. And seafood dinners don’t have to be complicated! This Shrimp Scampi with Tomatoes meal is quick and easy, and sure to be a family favorite.
 
 
Using frozen shrimp makes meal preparation fast, so that I can have a tasty dinner on the table in 20 minutes. I combined SeaPak Shrimp & Seafood Co.‘s Shrimp Scampi with fresh grape tomatoes and green onions for a fresh coastal flavor.

A recipe like this is a nice change of pace, because it adds a little bit of a twist to an old favorite like Shrimp Scampi. The extra vegetables meld with the Scampi sauce and combine for a dish that is perfect served over pasta or rice. My family loved this meal, and my daughter was scraping the last few vegetables out of the pan to eat them, which rarely happens at meal time in my house.

To make the dish I prepared the SeaPak Shrimp Scampi according to package instructions, adding in a pint of sliced grape tomatoes. Then right before the meal was done cooking I stirred in a bunch of chopped green onions and some lemon juice. The whole dinner was ready in the time it took me to boil a pot of pasta to serve it over.

Shrimp Scampi with Tomatoes

Ingredients
 

  • 1 box SeaPak Shrimp Scampi
  • 1 Tablespoon cooking oil
  • 1 onion chopped
  • 1 pint grape tomatoes halved
  • 5 green onions chopped
  • 2 Tablespoon lemon juice

Instructions

  • Heat a skillet on medium high heat.
  • Add the oil and sautee the chopped onion for 2 minutes.
  • Add the SeaPak Shrimp Scampi and prepare according to package instructions.
  • Add the halved grape tomatoes at the same time as the Shrimp Scampi.
  • Continue to stir the shrimp and tomatoes for 7-8 minutes.
  • Then add in the chopped green onions and lemon juice, and cook 2 minutes more.
  • Serve over rice or pasta.
