🥣How to Make Slow Cooker Sweet Mexican Pork

  1. Combine the onion powder, garlic powder, smoked paprika, and chili powder. Rub the spices all over your pork loin.
  2. Put the pork in the slow cooker. Pour half the enchilada sauce, half the brown sugar, half the green chiles, the salsa, and the soda.
  3. Let that slow cooker work for 6-8 hours. The low heat will break down the meat until it’s fall-apart tender.
  4. Take the pork from the slow cooker and discard the liquid. Shred the pork
  5. Put it back in the slow cooker and the rest of the enchilada sauce, brown sugar, and green chilis. Let it cook for another 30-60 minutes on low.

🍴Serving Ideas

This slow cooker sweet pork is perfect for tacos. Stuff it into warm tortillas and top with diced onions, cilantro, and a squeeze of lime.

Or make burrito bowls. Layer rice, beans, this flavorful pork, and your choice of toppings for a build-your-own bowl that’ll make you forget about takeout.

Pile the pork high on slider buns, add a dollop of coleslaw, and you’ve got a hand-held sandwich perfect for game day or a casual family get-together.

For a healthier twist, spoon the pork over baked sweet potatoes. It’s comfort food with a nutritious spin that’ll keep everyone returning for more.

💭How to Store

Transfer any leftover pork into an airtight container. Pop it in the fridge, where it will keep for three days.

If you’re looking for a more long-term relationship, the freezer is your best bet. When ready for round two, just make sure to thaw it in the fridge overnight.

⭐Tips

Be sure to check out the step by step instructions

  • Use two forks or, better yet, your trusty hand mixer right in the slow cooker for the easiest shredding.
  • Add some chopped jalapeños or increase the chili powder for an extra kick to make this recipe spicy.
  • If you prefer, you can substitute Pepsi or Dr Pepper for the Coke. But don’t use diet soda; it won’t work the same.
