Plate of spaghetti topped with spinach and creamy sauce, accompanied by a cooked chicken breast with herbs and sun-dried tomatoes.

I first made this recipe during a particularly chaotic week when my kitchen motivation was at an all-time low. After tossing everything in the slow cooker, I returned to what has since become one of our family’s most requested dinners. My kids, who usually turn their noses up at anything with spinach, actually ask for seconds of this one!

What I love about this Tuscan chicken is how the slow cooking process allows the flavors to develop and meld together. Don’t let the elegant-sounding name fool you – this is one of the easiest recipes you’ll ever make. Just layer the ingredients in your slow cooker, set it, and forget it.

I understand if you’ve hesitated about making cream-based sauces in the slow cooker. I was also worried it would separate or curdle. But as long as I cook this on low, it creates a silky-smooth sauce that clings perfectly to pasta or soaks into crusty bread.

Let me show you how to make this fool-proof dinner that only requires about 10 minutes of hands-on time. I’ll walk you through the simple steps and include all my best tips. This is the perfect recipe for those days when you need dinner to cook itself while you work on your mile-long to-do list.

🥣How to Make Slow Cooker Tuscan Chicken

  1. Mix the Italian seasoning with garlic powder, salt, and pepper. Generously coat your chicken breasts with this mixture.
  2. Put the seasoned chicken breasts into your slow cooker.
  3. Mince the garlic and dice the sun-dried tomatoes. Mix them with the cream, parmesan, and cornstarch
  4. Pour the mixture over the chicken, cover, and let the slow cooker work its magic for 5 hours on low
  5. Once the 5 hours are up, it’s spinach time! Toss in those leafy greens and let them wilt for 5-10 minutes.

🍴Serving Ideas

I love serving this Tuscan chicken over a bed of pasta. It makes an amazing sauce that soaks into the pasta and coats it with flavor.

If you are looking to cut some carbs, grab your spiralizer and serve this chicken over zucchini noodles. It’s a great way to add extra veggies.

When it comes to side dishes, simplicity is key. Add some crusty bread, which is perfect for soaking up every last drop of the sauce.

For a lighter option, serve the chicken with a mix of roasted vegetables. I like to use bell peppers, zucchini, and cherry tomatoes.

💭How to Store

If you plan to eat your leftovers within a few days, store the chicken in an airtight container. It will keep well in the fridge for up to three days.

⭐Tips

Be sure to check out the step by step instructions

  • While I usually opt for chicken breasts, boneless, skinless chicken thighs work beautifully, too.
  • For a lighter version, you can substitute half-and-half for the heavy cream.
  • If you’re not a fan of spinach, you can substitute it with another leafy green or leave it out completely.
  • Don’t cook this recipe on high, because the cream will curdle.
  • Mix a tablespoon of cornstarch with a little cold water to make a slurry if your sauce is too thin. Stir it into the sauce and cook for another 15-20 minutes.
