Fresh Strawberry Scones | Easy Homemade Treat

These tasty strawberry scones are packed with fresh strawberries and bursting with flavor! They are buttery and flakey and drizzled with a sweet vanilla glaze. Pick a quart of red, ripe strawberries and make this bakery quality treat for your family and friends!

Scones are a bakery treat that many people assume are complicated and difficult to make. They sound kind of fancy, like something you’d serve at an English tea.

But even though they sound a little intimidating they are actually simple to make. These strawberry scones are flakey and sweet and bursting with the amazing flavor of fresh strawberries.

Strawberries – I used fresh strawberries for these sweet scones. You’d have to modify the recipe to use frozen, because frozen berries have so much more water in them.

Baking powder – Make sure you use baking powder not baking soda! Baking soda doesn’t work well in scones and gives them an off taste.

Butter – For the best scones the butter should be very, very cold. Frozen butter works fine, but you can’t make flakey scones with room temperature butter.

Buttermilk – I prefer to use buttermilk in scones because I think the tangy flavor of buttermilk enhances the scones. If you don’t have buttermilk you can add a teaspoon of vinegar to regular milk and let it sit for a few minutes. Or you can substitute cream or regular milk for the buttermilk.

In addition to these key ingredients you will also need pantry staples that include flour, sugar, salt, vanilla extract and an egg.

How to Make Strawberry Scones

1. Prep

Scones work best when very cold butter is cut into small pieces. I usually use a knife to dice the butter into small squares about 1/4″ in size. If the butter is frozen use a box grater to grate it into very small pieces.

Then put the butter in the freezer for a few minutes while you get the rest of the ingredients ready. This way it is extra cold when it comes time to mix it into the flour.

While the butter chills wash the strawberries and dice them into very small pieces.

2. Mix the Flour and Butter

In a large bowl combine the flour, sugar, salt and baking powder. Stir them to mix them all together.

Then add the diced butter to the bowl and use a pastry cutter to cut the butter into the flour. If you don’t have a pastry cutter then two forks or your hands will also work.

The butter isn’t supposed to be completely mixed in, like it would be if you used a mixer. Combine until the mixture is the size of small crumbs. This crumbly butter and flour mixture is what gives the scones their flakey texture.

3. Mix the Wet Ingredients

In a small bowl mix the eggs, buttermilk and vanilla extract. Whisk them together to combine them and break up the egg yolk.

Pour the mixture into the bowl of dry ingredients and stir until the mixture is well combined and holds together in a ball.

Then add the diced strawberries to the bowl and gently stir to mix them in.

4. Shape and Bake

Put some parchment paper on the counter with a little bit of flour. Dump the dough out and gently push it into an 8 inch circle. The dough will be about 3/4 of an inch thick when done.

Don’t overwork the dough, it is supposed to be pressed, not rolled. If you prefer you can also use a scone pan or press the dough into something round like a cake pan or a cast iron skillet to shape it. That will give you a more perfect circle!

Once you have a circle use a sharp knife to cut it into 8 wedges. Put the wedges on a baking sheet that is covered with parchment paper or a silicone mat. These scones will expand a little bit as they bake, so don’t crowd them.

If you want to make the strawberry scones look even fancier use a pastry brush to brush a little bit of buttermilk on top. Then sprinkle the tops with sparkling sugar.

Bake the scones in a preheated 375 degree oven for 20-25 minutes. When they are done they will be golden brown on top.

5. Glaze (optional)

If you want to make the scones even sweeter then add a drizzle of vanilla glaze! To make the glaze combine powdered sugar with a little bit of milk.

Wait until the scones have cooled for a few minutes, then drizzle the sweet glaze over the top.

How to Serve

I think these scones taste best when they are served warm. I usually heat them up in the microwave for about 20 seconds if they have cooled off, because they taste so delicious when they are warm and crumbly!

These are perfect with breakfast, lunch or dinner. They are traditionally served with coffee or tea, but I think they go with almost anything.

How to Store

Store leftover scones in an airtight container at room temperature. They keep well for 2-3 days. Just warm them up quickly in the microwave and they will taste like they just came out of the oven!

You can also freeze scones and they will keep for 2-3 months in the freezer. To thaw them leave them at room temperature for a few hours.

Ingredients
 

  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 Tablespoon baking powder
  • 1/2 cup 1 stick unsalted butter, very cold
  • 1/2 cup buttermilk
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup fresh strawberries diced

Glaze (optional)

  • 1 1/2 cups powdered sugar
  • 2 Tablespoons milk

Instructions

  • Dice the butter into small pieces about 1/4 inch in size. Put the butter in the freezer to chill while you measure out all the ingredients.

  • Preheat the oven to 375 degrees F.
  • Wash, hull and dice the strawberries. Cut them into small pieces so there is strawberry in every bite.

  • In a large bowl whisk together the flour, sugar, salt and baking powder. Add the chilled butter and cut it in with a pastry blender, two forks or your hands until the mixture is the size of small crumbs.

  • In a small bowl combine the eggs, buttermilk and vanilla extract. Whisk it to mix it well.

  • Pour the wet ingredients and strawberries into the dry ingredients and stir until everything is moistened and comes together in a ball.
  • Dump the dough out onto a cutting board or counter top sprinkled with flour. Press the dough into an 8 inch circle. Use a sharp knife to cut the dough into 8 wedges.
  • Transfer the wedges to a baking sheet lined with parchment paper. Leave space between the scones for them to expand a little bit.
  • Bake in a 375 degree oven for 20-25 minutes, until they are golden brown.
  • If adding a glaze let them cool for a few minutes. Then mix the powdered sugar and milk and drizzle it over the strawberry scones.
