Tomatoes and Green Onions with Tuna

We eat a lot of pasta in our house, because it is quick and the kids like it. The standard tuna with noodle casserole is too heavy for me, but this one is less creamy and has more vegetables. The other thing I like about this recipe is that I almost always have the ingredients on hand, so it is great for days when things don’t go as planned and I have to make a quick dinner.  The entire meal can be made in about 20 minutes, so it is pretty fast.

Tomatoes and Green Onions with Tuna

Ingredients
 

  • 2 Tablespoon olive oil
  • 1 onion chopped
  • 1 clove garlic minced
  • 5 plum tomatoes chopped
  • 1 bunch green onions
  • 1 can tuna drained
  • 2 Tablespoon lemon juice
  • salt to taste
  • 1 box Rigatoni

Instructions

  • Cook the rigatoni.
    1 box Rigatoni
  • While the pasta is cooking heat the olive oil and saute the onion for a few minutes. Then add the garlic and tomatoes and cook for 5 minutes.
    2 Tablespoon olive oil, 1 onion, 1 clove garlic, 5 plum tomatoes
  • Add the green onions, tuna and lemon juice and cook for 3 minutes. Add salt if desired and serve over the pasta.
    1 bunch green onions, 1 can tuna, 2 Tablespoon lemon juice, salt to taste
