Tropical Traditions sells wholesome, healthy, real, organic foods that everyone can use in their cooking. I always enjoy reviewing their products because I know I can count on them to provide me with quality food. This month I am reviewing their Coconut Flour. This flour is made from the coconut meat after the oil has been extracted. It is organic, unsweetened and gluten free. It is also high in both dietary fiber and protein. It seems like more and more people are trying to eat gluten free, and this flour is excellent for that. You can use it to make quick breads or muffins in place of wheat flour, and you can even use it as a thickener for sauces.
I don’t need to eat gluten free though, so I decided to try adding the coconut flour to my smoothies.  It makes a great addition to smoothies, because it is so high in protein. I like to make smoothies that use just fruits or vegetables and water, without any dairy products. I think they taste better that way, but adding yogurt or milk does give them more protein. So to increase the protein in my smoothies I added a tablespoon of coconut flour to my favorite tropical smoothie.
- 1 1/2 c. fresh pineapple
- 1 c. frozen mango
- 1/2 c. water (I used coconut water)
- 1 T. coconut flour
- 1/2 c. ice
- 10 mint leaves (optional)
Combine everything in blender and mix until smooth.
This is one of my favorite smoothies, and I make it regularly. The coconut flour made a great addition. It added a slightly stronger coconut taste than I would get from just using coconut water, and went perfectly with the other fruits. This smoothie is nice and thick, and tastes kind of like the McDonalds’ Pineapple Mango Smoothie, but less sweet. I was out of mint when I made this, but the mint makes this smoothie taste even better, so I’d recommend using it. I like the idea of adding a little more protein to my smoothies with a natural, organic product. I will probably also try making muffins with the flour, since I think it will make for an interesting taste difference. They have an entire section on their website full of recipes, so I have lots to chose from.
Tropical Traditions has offered to send one of my readers their own bag of Coconut Flour to try out.
