  • Ground turkey: I use 93/7 lean ground turkey for this recipe. Going too lean (like 99% fat-free) will give you a dry meatloaf, and nobody wants that.

How to Make Turkey Meatloaf

  1. Preheat your oven to 380 degrees F
  2. Heat the olive oil in a skillet over medium heat and add the chopped onion. Cook it for 5-6 minutes, stirring occasionally, until it’s soft and translucent. Add the garlic for the last 30 seconds.
  3. Put the ground turkey in a large mixing bowl. Add the sautéed onion, the egg, Dijon mustard, and Worcestershire sauce. Don’t mix yet.
  4. Toss in the panko breadcrumbs, salt, pepper, dried herbs, and garlic powder. Pour in the milk. Mix everything with your hands until it’s just combined. Don’t overmix or you’ll end up with a tough, dense loaf.
  5. Line a loaf pan with parchment paper. Press the meat mixture into the pan and smooth the top with the back of a spoon or your hand. Slide it into the oven and bake for 40 minutes.
  6. Carefully lift the meatloaf out of the loaf pan using the parchment paper and transfer it to a baking sheet. Mix the BBQ sauce and demerara sugar, then brush this glaze generously over the top and sides of the meatloaf. Put it back in the oven for another 10 minutes. The glaze will caramelize and form this beautiful, slightly sticky crust,
  7. Let the meatloaf rest for about 5 minutes before slicing.
