Air Fryer Enchiladas

These easy air fryer chicken enchiladas are made from leftover chicken, tortillas and cheese for a fast but delicious meal.

INGREDIENTS

corn tortillas leftover chicken taco seasoning shredded cheese cream cheese chilis enchilada sauce

STEP 1 Combine the chicken, cream cheese, chilis, half the shredded cheese, and seasoning in a bowl. Mix well.

STEP 2 Soften the corn tortillas by microwaving them. Put a thin  layer of enchilada sauce in a shallow pan that will fit in your air fryer.

STEP 3 Add 2 tbs of filling mix to a tortilla and roll it up. Then place it in the shallow pan. Continue until the pan is full.

STEP 4 Cover the enchiladas with cheese and enchilada sauce.

STEP 5 Air fry at 400 F for 6-8 minutes, until the filling is heated through and the cheese melts.

Serve these tasty enchiladas with your favorite toppings, like cilantro, tomatoes and guacamole.
