In this easy side dish hearty baked potatoes are filled with mashed potatoes, sour cream and cheese and topped with bacon and chives. Use an air fryer and you can cook these stuffed potatoes in about 10 minutes or bake them in the oven.

This recipe starts with already baked potatoes. Use leftovers or bake some just to stuff!

STEP 1

Cut the baked potatoes in half and scoop out the insides. Leave the potato skin intact.

Mash the potato with melted butter, sour cream and half of the cheese.

STEP 3

Spoon the filling back into the potato shells. Mound it up if you need to!.

STEP 4

Air fry for 8 minutes or bake in the oven for 20 minutes.

Sprinkle cheese and bacon on top and air fry for 2 more minutes or bake for 5 min.
