ANDES MINT COOKIES

This soft chocolate Andes mint cookie is topped with melted Andes candy!

Mix the butter, sugar and coffee in a sauce pan. Heat and stir until melted.

Add the chocolate chips and stir until melted. Let the mixture cool to room temperature.

Beat the eggs in a mixer and then add the cooled chocolate mixture.

Stir in the flour, baking soda and salt to form a thick chocolate dough. Chill the dough for 1 hour.

Scoop the dough onto a cookie sheet and bake for 10 minutes.

Place half an Andes mint on each cookie while it is still warm after baking.

Use a knife to swirl the chocolate around and form a minty Andes mint cookie.
