CHICKPEA SALAD

Enjoy a chickpea salad at your next summer cookout! It is a great vegetarian side dish.

This chickpea salad is full of delicious fresh veggies like cucumber, tomatoes, parsley and bell pepper.

Rinse the chickpeas, then combine them with the parsley, cucumber, tomatoes and bell peppers in a large bowl.

Zest and juice the lemon. Add it to the olive oil, garlic, cumin, salt and pepper.

Pour the dressing over the vegetables and gently toss the chick pea salad.
