Easy Potato Salad Recipe

Make this easy potato salad recipe for Labor Day! This vintage recipe is the perfect side dish, with creamy potatoes and crunchy veggies.

Hard-boiled eggs and a sweet and creamy dressing make an easy potato salad just like grandma used to make.

Start by scrubbing, peeling and dicing the potatoes. Then put them in a saucepan, cover with water and bring to a boil. Let them simmer for 10 minutes, then drain.

Hard cook some eggs, by either boiling them on the stove or making air fryer or Instant Pot eggs.

Peel and chop the eggs. Then combine the cooked potatoes in a big bowl with diced celery, onions and eggs.

For a creamy dressing combine mayonnaise, vinegar, sugar, mustard, salt and pepper and whisk until smooth.

Pour the dressing over the potato mixture and stir until everything is well coated with the dressing.
