Green Tomato Pickles

Winter is coming! Make green tomato pickles with the last tomatoes from your garden.

Slice the green tomatoes.

Add garlic and dill to a Mason jar, then fill it up with tomatoes.

Combine the vinegar, water, salt, sugar, peppercorn and red pepper in a saucepan and heat to make brine.

Pour the hot brine over the tomatoes in the jar.

Add a lid. Let the green tomato pickles cool to room temperature, then refrigerate.

The pickles can be eaten the next day and last for 3 weeks! Use green tomato pickles as a snack or add them to burgers or sandwiches.
