GREEN TOMATO PICKLES

When frost threatens why not make green tomato pickles!

Slice the green tomatoes and add them to a Mason jar.

Add some garlic and dill to the jar with the green tomatoes.

Make a simple brine. Combine the vinegar, water, salt, sugar, peppercorn and red pepper in a saucepan and heat.

Pour the hot brine over the green tomato pickles in the jar.

Add a lid. Cool to room temperature, then refrigerate the green tomato pickles.

The green tomato pickles can be eaten the next day and last for 3 weeks! Use them as a snack or add them to burgers or sandwiches.
