Simple Summer Chickpea Salad

This healthy chickpea salad is loaded with fresh vegetables. It is a vegan salad, great for New Year's eating.

It is full of veggies like cucumber, tomatoes, parsley and bell pepper and topped off with an easy homemade lemon dressing.

Rinse the chickpeas in a colander.

Combine the chickpeas, parsley, cucumber, tomatoes and bell peppers in a large bowl.

Mix lemon juice, oil and spice in a bowl to make the dressing.

Pour the dressing over the vegetables and gently toss until the healthy chickpea salad is coated.
