Healthy Minestrone Soup

This healthy minestrone soup is vegan, filling, full of veggies and ready in about 30 minutes!

Dice the vegetables and add them to the pressure cooker. Or buy pre-cut veggies for to make prep even easier.

Put all the minestrone ingredients except salt and pepper in the pressure cooker.

Stir to mix, then put the lid on and pressure cook for 10 minutes.

Release the pressure. Taste and add salt and pepper as desired. Then garnish with fresh herbs.

This healthy minestrone soup is delicious! It tastes like Olive Garden minestrone.
