Instant Pot Jambalaya with shrimp, andouille sausage, chicken and rice will make a spicy one pot dinner for your family. And it is ready in about 45 minutes!
– olive oil – andouille sausage – chicken thighs – onion – green pepper – celery – garlic – Cajun seasoning – thyme – salt & pepper – rice – can diced tomatoes – chicken broth – cooked shrimp
Slice and brown the sausage, then remove it and refrigerate it until after pressure cooking.
Brown the chicken using the Instant Pot Saute function.
Deglaze the Instant Pot, with the broth. Then add the onion, peppers, celery, garlic and seasoning.
Stir the rice in.
Put the tomatoes on top, but don't stir them in. Pressure cook on high for 8 minutes.
After pressure cooking stir in the shrimp and reserved sausage. Put the lid back on and let it rest for 5 minutes.
This easy recipe is quick enough for a weeknight dinner!
